寅之助
A new brand of Houou Mita. The prototype is said to be made with 50% polished rice from Tochigi Prefecture and carefully brewed with Nikko's gojinsui.
It is a junmai-daiginjo-namaishu, a very high-cost sake, priced at a little over 1,500 yen!
Slightly carbonated, with a tangy gassy feeling when opened.
The aroma is subdued, sweet and refreshing.
The taste is light and refreshing. In addition to moderate sweetness, it has acidity and a good sharpness. The umami taste is followed by a touch of bitterness.
You can enjoy complex flavors, but they are all subtle and you will not get tired of drinking it. ☺️ However, I recommend drinking it as soon as possible after opening the bottle, because it was the freshest and gassiest when it was just opened.
