My favorite liquor store, which is the closest to my office, just sent me a message on line saying "Senkou UA.1 st 2025 Ver. This is the last shipment. Don't miss it. Don't miss it. But I had to work late that day and couldn't get it after all 😭. I had given up on drinking it, but after a long time, I went to my favorite liquor store a little distance away and found it 😆 I bought it without hesitation: ‼️ I'll take it☺️ When you open the bottle, bubbles appear like a carbonated drink, and with the carbonation, the lees that had accumulated at the bottom of the bottle float up and dance around inside the bottle 😊. Delicious ‾❗️ After a clear jump of acidity, a juicy taste spreads in the mouth. It doesn't feel like alcohol somehow, and the juice taste that I can feel is thin, like a thin melon. The sweetness lingers in the aftertaste, but don't believe me, my taste buds are weird, but it's like a thin red bean paste. Anyway, it is a very dangerous drink that lingers on and on, and you can't stop 😅.

I'll take a bottle of ❤️. It has a gorgeous aroma. A gentle jump of acidity accompanied by astringent bitterness‼️ After drinking for a while, a creamy, glossy sweetness spreads from the tip of the tongue to the entire tongue, delighting the palate 😘. The sweetness is not too strong, but just enough to keep you coming back for more. It leaves a lingering, umami taste in the mouth 😁. I usually dislike brewer's alcohol, but I didn't feel any brewer's alcohol from this winter's Canon. I thought so, but from the second day of opening the bottle, I felt brewing alcohol 😌.

This marks a milestone, 400 check-ins ‼️ I thought about what to drink, but decided to be honest here and drink my favorite Yamori 😊. When I poured it into the cup, I saw fine bubbles dancing 🥰. It's colored to the point where you can't tell if you can see it or not. When you put it in your mouth, the acidity jumps in! A pleasant sweetness that envelops the entire tongue. Then, a bitter taste is transmitted to the back of the tongue, and just when you think that this is the end, a shiny flavor like fresh cream appears on the tip of the tongue. Furthermore, a strawberry-like sweetness appears in the aftertaste. ❣️ Delicious... ❗️ I tried it with moldy cheese and it went perfectly with it. Yamori. I still love it😍.

The sweetness you feel at first tastes like light melon juice 🍈. Is this the taste of turtle tail? Delicious😄. As it cools down, the sweetness becomes more pronounced. Next, when served hot, the sweetness is emphasized. Recommended for those who like sweet taste. Furthermore, when served slightly chilled, it is a dangerous drink with a thin melon flavor that jumps down your throat without any resistance, with absolutely nothing to catch your attention 🤪. I usually don't pay any attention to this at all, but I noticed something on the back label: ......... The yeast is labeled as "Tohnoh University Isolated Strain". The reason why I am interested in this is because my daughter is going to enter Tokyo University of Agriculture this spring 🙂. It seems I found it by chance because of this connection 😉.

I always stop by this liquor store when I pass by. When I peek in for the first time in a while, I find Nabeshima in the fridge😍. This is the first Nabeshima I've encountered that I've never had 🥰, so I bought it, but when I checked my sakénowa records, I had already had it a year ago 😝. I'll have to get back on track 😚. When I poured it into the sake cup, I saw fine bubbles floating in the air. It makes my expectations soar! The taut acidity jumps in. After a thin spiciness, a sweetness spreads, but then an astringent bitterness appears at the back of the tongue. All of them are moderately assertive, well-balanced, and pleasant. It is fresh all the way through 😆.

I found this at a liquor store I sometimes visit. It was lined up in the fridge, and the description said it was a sake that was only available at "4 stores" in the whole country. I bought it immediately 😁. Bon appétit ☺️ It's a light nigori, you can tell or not. The aroma is mainly fresh. A dive of acidity reminiscent of a slightly carbonated beverage! A gentle, pleasant sweetness immediately spreads from the tip of the tongue to the entire tongue. Then, on the middle of the tongue, the juiciness is delightful. The freshness continues! It is delicious😍. Change the date and drink it lukewarm. The gentle acidity spreads. It is soft. I can't describe it well, but the luster and umami are transferred to the tip of the tongue and as it reaches the back of the tongue, a pungent taste emerges at the back of the throat. This umami tastes like a subdued citrus juice that stays on the tongue and makes you feel dusty 😍. What a comforting and soothing experience. I like it a lot😊

A light melon juice-like flavor was detected on the tip of the tongue, followed by a slight sourness and astringency that traveled from the middle of the tongue to the back of the tongue, and then a creaminess appeared at the back of the tongue. Somewhat at the back of the tongue, a cookie-like flavor also appeared. It is a sake with a dessert-like taste, so be careful not to drink too much 😁.

This year's second bottle is one that is full of New Year's spirit. Itadakimasu ☺️ The aroma is sweet and fresh. It is dimly cloudy (just a little less than clear) and has a light yellowish tinge. It also has a slight yellowish tint to it. When you put it in your mouth, the acidity jumps in! Very light and refreshing 🥰. A pleasant sweetness stays on the tip of the tongue. Then, the light acidity and sweetness moved from the middle of the tongue to the back of the tongue, flowing to the back of the tongue and exiting. Light and refreshing from start to finish 😆. However, it seems that if you let the pleasantness of the wine take over and drink it, you will easily get drunk 🤪.

I opened the fridge and thought a bit about what to have for my first bottle of the new year 😅that was an unnecessary thought 😅I'll have a good drink that's easy to drink without thinking about this and that 😘. Pouring it into a sake cup, it is colorless and transparent. The aroma is not at all unpleasant and has a faint scent of pollen 😊. Soft and gentle acidity in the mouth. After that, the taste is like a mixture of melon and ramune, and the sweetness spreads from the center of the tongue to the back of the throat. Then the bitterness bounces back from the back of the tongue to the middle of the tongue 😚. It's juicy and fresh all the way through. It's so dusty😍.

On the second day, I warmed it up to lukewarm. The acidity was clear 😚. The taste is also clear and glossy, the sweetness and spiciness spread from the tip of the tongue, and I thought it would end there, but it turned astringent and bitter from the middle to the back of the tongue. It has no unpleasant taste and is just right 😍. And at the back of the throat, there is a lingering taste like the taste after eating a banana. As I continued to drink it, the banana feeling spread 🥰. For me, this lukewarm flavor suits me. ☺️

Pour slowly at first to avoid mixing the oli, but still pure white ‼️ The aroma is like a cool drink. Lots of medium mash. It is strong. The sweetness is thin and the taste is refreshing, but basically the thick flavor of rice spreads well without being unpleasant. Since it is not too strong, you may think you are drinking a cool drink 😅. The remaining bubbles are coming up from the bottom of the bottle, and the top part looks like a boiling magma. The second drink is two to three times cloudier, but the flavor remains refreshing. The carbonation is stronger and the grain is bigger. I enjoy it. I served it with sashimi, and naturally it went well with it. Later, I served it with curry, and it went well with it. I guess everything is OK.

I've been busy with work for a while and my posts have been piling up😅. Even though I've been busy, I didn't give up drinking sake, so I'm going to post a record of that 😚. I didn't read the warning carefully and opened the cap normally. Then the bubbles started coming out from the bottom of ........., and they came up to the ori which had accumulated at the bottom 😝. I closed the cap thinking that it would overflow if I didn't.... It was a little late for that. Then, after a while, I loosened the cap, and the surface of the water instantly rose to the top. I thought it would overflow 😅. After about 10 minutes of tightening and loosening it, it settled down. Bon appétit☺️ Cloudy white color, smells like weak sweet sake. It has a very fine shuwa shuwa. Then, it tastes like a spicy, crisp, light, and sweet amazake without sweetness. It was ooey-gooey, and the bitterness spread to the upper jaw before it snapped away. A strange feeling. Completely cloudy, yet refreshing 😋.
