Very cool bottle. It looks like a work of art. The taste is sweet and sour and very unique. However, it is not too sweet or sour. It can be served with fruit, cheese, meat, fish, etc.! It is a wonderful food wine that enhances everything. The only thing that bothered me was the cap seal. I could not open it by hand and had to use a wine opener. I don't need this by any stretch of the imagination.

Great aroma. It is like a fine melon. A wonderful umami flavor appears from behind the beautiful acidity. Finally, a moderate bitterness invites you to take another sip. It's really a heartbreaking experience. I was already hooked. I cherished every last drop.

Aroma is like green apple. The taste is sweet and sour. It is good as a stand-alone sake or with snacks. It is still a very nice sake. I had a chance to talk with the president of Mine-no-Hakubai at an event at a certain izakaya before. I wanted to convey this impression directly to him and would like to see him again.

With the SDGs being loudly called for, this is an amazing sake that abandons 81% of its rice. I was overwhelmed by its unadulterated flavor and brilliant acidity. The price was 5,000 yen for a No. 4 bottle. I think it is unbeatable.

Hyakujuro is sharp and dry. This new sake has a Sake meter of +10, but I found it to be just the right level of dryness, with a strong sweetness and umami. I liked this balance.

Even though it is a daiginjo with a 40% Yamadanishiki rice polishing ratio, there is no ginjo aroma and no sweetness. The umami and acidity are very noticeable. According to the brewer, this is what you get when you age it for four years. If you want to match it with fish dishes, it might be better like this.

You can tell by the melon-like aroma that overflows when the bottle is opened. It is definitely a sweet one. The acidity and bitterness exist only to enhance the sweetness. I think it can be called a high-class sweet.

This sake is made with the oldest sake mother in Japan, Bodai Hashiroshi. Although it is a nigori sake, it does not have much sweetness or umami, and has a refreshing taste with a noticeable acidity. I had the impression that sake made from Omachi was sweet, but this was completely different.

This is a very powerful daiginjo that starts with a sharp alcohol taste and a strong astringent taste, and finishes with a sweet taste. Today is the Jikin Festival at home. This one is 80% Hachitan-Nishiki. The aroma is milder than that of the raw. Other than that, I could not tell any difference at all due to my lack of training. My wife and daughter, who drank it with me, said "Oh, it's totally different! but they must have been pretending. And I said, "Oh, it's true! It's true! I'd like to think I'm even with her.

Thanks for your comment. It is difficult to compare sake drinks. I am confident that I can guess 80% if I compare Coca-Cola and Coca-Cola Zero.

Today is the Jikin Festival at home. This Jikin is 80% Gohyaku-mangoku. As soon as the bottle was opened, a fragrant aroma rose from the bottle, and I was convinced that this was definitely a tasty one. The clear sweetness and acidity were in perfect harmony, and the taste was refreshing. This is the first time I have seen the design on the stopper. Why is it not the usual one?

A daiginjo with a strong self-assertiveness. Spicy, bitter and delicious. This is the third sake from Aichi, following Shikishima and Kunoshinin Kuheiji. The flavors are completely different, but somehow I feel the same nuance. All of them have a single core and are consistent.

The sweet-sour-bitter combination is exquisite and agonizing. It is amazing. The strongest of all is the bitterness. Like hops in beer, I feel it is an essential element. For a snack, something with sweetness seems to be good. I think it goes best with simmered yellowtail. I think it would also go well with something sweet like fruits or chocolates.

What does 128% order degree mean? Why "Queeen" instead of "Queen"? I was thinking about it as I drank the sake. It was a delicious sake with a good impression of harmony of flavor, acidity, and sweetness. The alcohol content is quite low, but it is so assertive that you cannot notice it.

This sake is made by Fukumitsuya, famous for Kagatobi and Fukumasomune. It has a beautiful mouthfeel that is typical of ginjo-shu. Thanks to its low alcohol content and sweetness, it is very easy to drink. Next year will mark the 400th anniversary of Fukumitsuya's founding! I am very glad that they were able to escape the damage from the Noto earthquake, but I am sure that they are still operating under very difficult circumstances. As a sake drinker, I can't do much about it, but I would like to enjoy it with care at least.
