Extremely personal preference ⭐️⭐️⭐️⭐️⭐️5/5 (within 1 hour of opening the bottle) 2023 Autumn Tankoba Kumi is badass 🫢. It has less sweetness, more sharpness, and more tingling than 2023 Spring (so beautiful) 😭 I opened it because it was the wife's birthday 🙏. The "tamba kumi-kumi" is freshly squeezed sake, and is available only to sake brewers who can pick it up at the brewery on the spot (of course, it's also available outside of Yamaguchi Prefecture due to good distribution nowadays). The brewery has instructed us to keep the sake in the refrigerator and finish it within two weeks due to its extremely delicate quality, and the liquor stores are asked to consume it by the end of October. Sake is usually bottled in brown or green bottles to protect it from ultraviolet rays, but the white frosted bottles mean that the sake should be refrigerated in a dark place at 5 degrees Celsius or lower and drunk as soon as possible. ✊️ To be honest, I exaggerate, it's like "Meiji Oishii Milk" ‼️(I exaggerated 🙇🏻) with a gassy feeling and more sharpness 😂I don't think you can get drunk with Meiji Oishii Milk, but it's clean and beautiful and the most wholesome feeling 🥹.

When you open the bottle, the fruity aroma of ripe rice gently wafts in the air, and when you drink it, the freshness of Junmai Daiginjo unfiltered unpasteurized sake spreads through your body and soul without a trace of hesitation.

It's a Junmai Daiginjo made from Yamada-Nishiki, which has a lot of beautiful flavor, and polished to 30%/90%, so it's more than fruity and has a milkiness to it. The super clean juicy milk is accented with just a little bit of beautiful bitterness in the last part, and then it is followed up with a fluffy taste.

The first cup is almost free of acidity in a good sense. The first cup has almost no bite, in a good sense. The first drink is almost no hooking, in a good way, and the subsequent cup of Wakarimizu is very good. But the more you drink it, the deeper the flavor becomes and the more the umami deepens (but I think within 1 hour of opening the bottle) 🌾.

In my opinion, it is absolutely essential to keep it well chilled and drink it within an hour of opening the bottle 👌. Also, the balance of acidity, sweetness, bitterness and nourishment is divine‼️✨✨ Thank you so very, very much 🙇🏻🙏

Summer Rain Good evening...first time here! Opened a bottle of good sake for your wife's birthday! Nice 😍Thank you for the very detailed report! I thought I had already had all the Otters before the boom! I thought I'd had enough of Otters before the boom, but now I see there are many different kinds...maybe I should try some!

Thank you, Pon-chan 🙏I think the ori is different for each individual, but it was thin 👌After all, I like unfiltered raw sake type 🥹 But unfired can be terrible as the taste is totally different in freshness and condition 😭

Thank you, Kozo 🙏. It's great to see that Asahi Shuzo, a small brewery in Yamaguchi Prefecture, has ignited the sake boom (modern boom?) with Otters. and it's really great that they are still innovating and working hard ✨✨.

Good evening Mr. Summer Rain 🌛. Happy birthday to your wife 🎉. The review method of forcing through the character limit of 500 words, I didn't know you had it in you 😲. That's how strong your feelings for this drink are 😁.

Thank you very much, Jive 🌓. If possible, I'd like to have the character limit removed or at least a 1000 character limit 😂 Honestly, I've underestimated otters lately, so I'm really surprised 🫢I'm very grateful to Asahi Shuzo now: 🙇🏻
