kawanori
This is the Shinkansen on the way back from a business trip to Tokyo. Purchased at Hasegawa Sake Shop in Tokyo Station. It was another sake typical of Miyagi. While light and dry, its depth and subtle bitterness matched the smoked oysters. Thank you for the sake.

Purchased on recommendation from a local liquor store. More harsh than soft for Fukushima. Seemed rougher than when I drank it before. Huh?

Hiyoroshi Murayusuke, which was recommended at my usual liquor store. It was delicious. When I drank it in the past, it was not unpleasant, but it was sweet anyway, but today the feeling was different. It is deep.

I bought it thinking of the Noto disaster. It is a strong sake, typical of Ishikawa. It is deep. I paired it with fatty mackerel, and it was delicious.

It has a "soft mouthfeel and beautiful sweetness," but the impact is quite strong. The taste seems to have softened and settled down over time since the mouth opened.

It is a local sake from Tochigi prefecture. It has been a long time since Wakakoma-san. This is the first time for me to taste 70% polished rice. Hmmm. I felt the smell of bran rather than the taste of rice.

This is probably the most nationally known brewery in the local Tochigi area. I can understand why it sells well. However, it used to have a strong and sharp aroma, but now it seems to have been polished up. It seems to have gained a calm and sophisticated taste.

It has been a long time since I last tasted Masumi. The aroma is moderate and refreshing with No. 7 yeast. It goes well with food. Nagano sake is not flashy, but it is good because you don't get tired of drinking it.

One of the recommended breweries in the local Tochigi Prefecture. We are happy to see that they have recently won awards at international competitions and their name has been selling well. The summer version is more sharp.

A gift from an acquaintance. It is a little bit more koji rice than usual, but there is no unpleasant smell and it is exquisitely balanced.

I have not had Edo Kaijo since it was served at a Japanese restaurant before. Was it my imagination that I felt a little bit of a cloying taste?

A fizzy, low-alcohol 12% sake. Chilled and opened on a hot day. It is a bit gassy, so hold on to drinking it for a bit after putting it in the glass. After a while, it becomes nice. You can enjoy it as much as you want.

Sake served with sushi. It was my first time in Nagano. It is not flashy but has a certain elegance. I was not tired of drinking it, so I decided to continue with it for the rest of the day.

First drink at my usual sushi restaurant. Refreshing. Fruity. The aroma is gorgeous, but not cloying, and the sharpness is typical of Kochi sake.

I'm not sure. It certainly seems like it is unfiltered raw sake. Maybe I should have tried changing the temperature.

Souhyo, a leading local sake brewery, collaborated with Ichikai-cho. The label features an image of a small hawk, a sashiba, returning to the town every year just like Tora-san. The taste is, of course, unmistakable.

Hi kawanori 😃 Sasiba🦅 is famous among bird lovers in Noda City, Chiba Prefecture, where my parents lived, and there were many birdwatchers there at the time of year! Something about Tochigi sake 🍶 and sasiba returning home... it's a sake that connects to many things 🥹.
