Although it is a daiginjo, you can taste the umami of the rice, and the acidity is balanced to your liking with a clean aftertaste!
It was recommended to me at a sake brewery.
On the way back from the Okkuji Trail, we stopped by a sake brewery and tasted a variety of sake.
The daiginjo was to my liking and I bought a bottle to take home.
It has a mellow taste with a refreshing summery mouthfeel, yet the umami of the rice can be felt.
While many summer sakes are light and refreshing, this was a well-balanced sake that I liked.
