It is not too sweet for a light nigori, and I like the balance of bitterness and acidity in the aftertaste with a slight effervescence.
I used to shy away from light nigori, but with this I can enjoy it with food 😆.
It has a subtle sweetness with a strong rice flavor and a clean aftertaste typical of Ihyakumangoku.
After comparing Hayashi's sake with different rice, it seems to be a good match with Ihyakumangoku.
