This sparkling rice wine is made from the sake rice "Gohyakumangoku" with fine bubbles and a refreshing aroma like muscat, and offers a light and refreshing taste.
To bring out the flavor of the base junmai sake, the alcohol content was kept at 12 degrees, about the same level as that of ordinary sparkling wine. The sweet and sour flavor is voluminous, but the crisp, sharp acidity unique to Kubota gives it a refreshingly clean feel on the palate."

This is the third in the Yamamoto series, following Pure Black and Midnight Blue.
The sake rice, milling ratio, and yeast used are the same as for Pure Black, with the only difference being the koji mold. The sweet and sour first kiss-like flavor is derived from citric acid, which is found in lemons and other citrus fruits.
It is only prepared when there is enough stock of Pure Black, so there is no fixed time for its release. You should buy it when you find it in stores."
