Quite dry. Goes well with spicy food. There is a patisserie next door to the brewery, where they offer chocolates and sweets made with Mizuo. Interesting that there are two types of rice used.

I learned the next day that it is good lukewarm. I drank it cold, but it tasted quite clear. I wonder if I will ever be able to taste it lukewarm again.

I don't know which sake it is. But it is refreshingly good! Since the release of "Kanpokuto Honjozo Nama-shu" in 1985, the company has expanded its lineup to include ginjo, junmai ginjo, and daiginjo, and has won numerous awards at national sake competitions. In 2008, "Kanpokuto Ginjo-shu" was selected as the best sake in Japan at the National Sake Competition. Through our constant striving to produce the best, and our continuous challenge to improve quality, "Kanpokuto" has grown to become Tamanoi Shuzo's signature product."

At the celebration of the 60th birthday and retirement of a colleague. A tradition every winter! The quality of koji has clearly improved with the new koji room and new facilities. It is a new sake with high expectations. The sake was rinsed over and over again, covering the entire body with unrefined sake, in order to achieve a silky mouthfeel. In addition, the balance of saccharification and fermentation of the unrefined sake was thoroughly controlled at a low temperature comparable to that of the sake being exhibited, in order to obtain a rich sweetness similar to that of wasanbon (Japanese sake). The resulting sake is as fresh as a freshly-ripened muscat or pear. The youthful aroma of new sake spreads, and a mellow, yet clear, sweetness and moist bitterness fill the palate over a wide range. In the latter half, a tingling gas sensation leaves a refreshing, slightly dry, and slightly lingering aftertaste. The texture is silky, fine and delicate. You can feel its quality more than last year. Sentori Winter. Enjoy this delicately crafted, clear, active nigori."
