I've crossed a bit of a work mountain, so I took the plunge and opened the bottle (lol).
I thought the aroma was gorgeous and the balance of acidity, umami and the bitterness that comes at the end was wonderful. As expected ✨

The taste is basically the same, but it is surprisingly sour and not too sweet, with a slight bitterness at the end. It is delicious!
The aroma is fruity, as is typical of rice wine.
However, there is no strange sweetness in the taste, and the gentle acidity is good.
The bitterness at the end tightens the flavor and the overall balance is good.
The sake by itself seems to be infinitely drinkable (lol).
It is said to be made under the supervision of a sushi chef in Hokkaido.
The refreshing acidity does not interfere with the taste of vinegared rice and soy sauce. It was perfect with sushi!
