takashiThe aroma is modest. In a good sense, there are no outstanding characteristics, but it has a good balance of umami, acidity, and bitterness, and was delicious with a meal. As one would expect from Tazake.

takashiThis is a limited edition sake that has been aged one year longer than the regular hiyaoroshi. It has a milder acidity and more umami than the regular version. Personally, I prefer this one. The difference in taste was quite surprising.

takashiThe first Yoshida Kura u The mouthfeel is gassy and soft with sweet acidity, but later on comes a firm umami that is typical of Yamahai, which I thought was quite interesting.
