Saku Waetsu Junmai Ginjo. I heard it was a limited edition for restaurants. No wonder I had never seen it before. The aroma and acidity are quite strong. It has a strong core.
The Hitakami Betsujyu Nakadori Junmai Ginjo that was just poured. It is also refreshing. However, it has a subtle acidity and a firm taste. It's nice. I was planning to finish with this kind of sake.
Raku-no-Se Junmai 4-dan rice over-brewing. This is your first sake. I drank it thinking that it would be dark and sweet, but it was sweet. But it was sweet. Very thick. It was more than I expected. This is not something you can drink casually.
Toyo Bijin Jyundo Ittou Junmai Ginjo Omachi. After all, the combination of Toyo Bijin and Yumachi is a sure thing. It is delicious. Refreshing aroma and rich flavor.

Tenmei Orikarami Junmai Namaishu Nakadori No. 2. It is a slightly cloudy Tenmei Namaishu Junmai. It has a gorgeous aroma and a deep flavor. It is a taste that you can drink slowly.
Modern Sentori Omachi draft. Wow, we are too lucky to have this one. It is fresh and fruity, with a plum-like sweet and sour taste. It has the taste of Omachi, but at the same time, it has the goodness of Sentori.

Since the Tengu Mai didn't fill my glass, I had a little bit of Ume Ichirin Kuradashi dry sake as a service. It is refreshingly dry, but has a hint of sweetness along with a thickening taste. It's interesting because it has a mouthfeel that is not typical of sake with alcohol.

Today's sake was Tengumai Koku-Label Yamahai Junmai. It has a thick flavor typical of Yamahai, but with a clean aftertaste, it is relatively easy to drink and has a nice mouthfeel. However, there was not enough to fill the glass.
Bon Junmai 55. it's a standard sake, but it's delicious. I was going to ask for a full bottle, but they only had half a bottle and a little more. Well, it was close to closing time, so it was fine.
The taste is still clear and refreshing.
Isshaku-Suisei Junmai-Ginjo Sake Mirai. As expected, the sake rice called Sake Mirai produces a beautiful sake. The aroma is clear and delicious. I can't get enough of it.
But the staff at Fukuno Tori is just as good at pouring sake as we are. Look at how artistically they poured the sake into the difficult situation of a single gugumini and a small plate, and yet not a drop overflowed. It is beautiful.
So I went to Fukuno Tori Oizumigakuen for the first time in a while. Unlike in the past, I have a regular fare to Kotakemukaihara, so I guess it is a little easier to come here. The sake is as good as ever.
The first one was Eiko Fuji Itsusenkazehada Dry. It is a rather heavy dry junmai, so it is a bit heavy to drink at the beginning of the day, but I like it, so it is OK.
Kido Junmai. Whenever I find it, I always ask for it. ...... Well, most of the Shinjuku Sohonten stores have Kido, but I just can't resist.
It has a light and refreshing taste, but you can taste the umami and sweetness of the rice deep inside. I like it.
Kangiku Ocean99 Kukai Inflight Junmai Ginjo.
Kangiku Ocean99 is becoming more and more famous, and last year or the year before, it was still a sake that only those in the know knew about.
It has a refreshing taste with a strong sense of minerality. It is just like the sky. It has a nuance like a clear sky.
Mimuro Sugi Junmai Ginjo Dio Abita is a sake that won the gold medal at the Sake Shop Grand Prize 2023 announced last fall. It has a bouncy aroma, refreshing fruitiness and acidity, and is delicious. I wonder if it would look even better with vegetables.

Yamori Arashibiki Junmai Unadjusted Nama. This is one of the best sake produced in my hometown in Tokyo, and I can't get enough of it. The strong aroma and the smooth, rich flavor are the essence of Yamori's Arasakibiki.

First of all, I went to ...... to check out the sake, Higashimurayama Beat, which is distributed only in the city and bears the name of Higashimurayama, my hometown. It was purchased at a recent event. It is a sweet and sour type of sake, very fruity.
