One of the three most mysterious sake breweries in Nagano Prefecture (in my opinion).
The brewery is located in the downtown area in front of Matsumoto Station. Currently, the brewery is not making sake, but the contents are made by Iwanami Sake Brewery.
The name Fukashi Tsuru is familiar as the parking lot in front of Matsumoto Parco, but few people know that it is a brand of sake.
It is not so much of a mystery from a civic point of view, as it appears at sake events in Matsumoto Taira.

Kikkura Sake Brewery
Sweet and soft. Like a white wine, though my wine experience is limited. Seems to go well with Western food.
This sake is sold mainly at sales events in urban areas and is not widely available. It is very special.

The brewery has a hotel where visitors can experience sake brewing, and this season the hotel is so busy that it is fully booked. It sure looks interesting.
Picture 4 is miso ramen with sakekasu from the Tachibanakura Sake Brewery. A collaboration between a ramen shop and a sake brewery in Saku is currently underway (Feb. 12).
The inclusion of mashed potatoes gives the miso and sakekasu a sense of unity! Amazing! It's new! I'm going to copy it.

Nigori, effervescent. Slightly sweet and firm taste. Weak acidity, bitterness on the tongue. I rather like it.
The label on the back of the bottle says it is supposed to be heated to O, but I warmed it up. It was cold. It is very easy to drink, but it is not impressive. Certainly O.

A magnificent house. The shop is spacious and sells not only sake, but other goods as well. There is also a cafe and event space. The museum is open to the public, and you can see the old tools, sake containers, signboards, and so on. The name of the shop is said to mean "chief (osa) of a well. I had never heard of it before.
Picture 4 is a back fatty pork bone ramen with Kurosawa Sake Kasu (sake lees). It tasted like a big fight between the aroma of sake and pork bone. The collaboration between a ramen shop and a sake brewery in Saku is now being held - 2/12.

We bought it at the nearest distributor that Igarashi Shuzo told us about. Igarashi is sold only in the Kanto region.
Naturally, it is not sold in Nagano Prefecture.

The aroma is subdued, maybe in the pear category. Clean mouthfeel. The taste comes gradually after the first sip. Delicious.

The sake brewery is located in a residential area in Hanno City, Saitama Prefecture. A sake brewery in such a place. The store is open on Sundays. They did not have Igarashi Naokumi, but they had Tenranzan Naokumi in a different tank.
There is a field to select a location when submitting a post, but Igarashi Sake Brewery does not come up as a candidate unless you are in the area. I have to bring the search results back with me when I go on an expedition.

Apple-like aroma. Clean aftertaste. Sourness and sweetness, with just the right amount of astringency after swallowing. Gives the impression of an apple pie with cream. Delicious.

It was a new sake at the time because the brewery's limited edition sake was sold out. I let it sit for 4 months because I felt it was a waste.

Sweet, slightly acidic, slightly numbing on the tongue. Bitterness at the end. Refreshing yet sticky impression in the mouth.
Purchased at a sake brewery. Nishio Sake Brewery is well-known for its Soma Sake. The location of the brewery in the mountains makes one wonder if there is a sake brewery in such a place.
The most popular sake is the Soma Sake, which is a limited edition of the brewery, but I dared to skip it and buy this one. It was not recommended, perhaps because it is watered down, but it is very tasty. Just right. I am glad I bought it.

Slightly effervescent. Oriki flavored. Refreshing and dry. It has a juicy taste with just the right amount of acidity, astringency, and bitterness. If you are not careful, you can drink it indefinitely. It has a good intoxicating effect.
Purchased at a liquor store right next to Kiyose City Hall in Tokyo. It is a local sake from the neighboring Higashimurayama area.
The owner says that when it was a minor brand in the past, he sold it to Shinjuku and Ikebukuro, and was underestimated as Shimura Ken WW, but he silenced them with the taste. How cool!

There are only about 30 liquor stores in Japan that carry Yamori. Please contact the sake brewery. It may be sold surprisingly close by (there is one store in Nagano prefecture).
Tomono Sake Brewery
A delicious, slightly effervescent, unblended sake with a gorgeous aroma. It tastes better when it is warmed. Soft sweetness, acidity with a touch of calpis. Refreshing sensation through the throat. It is very delicious.

The sake lees ramen was a must for drinkers with its ginjo aroma. It was only available for a limited time. Saku's ramen shops often hold events, so if you ever visit Saku, be sure to check them out.

New sake for the second year, 2023BY. Recently, there seems to be a special distributor outside of the prefecture. It is starting to sell well.
I made an appointment and visited the brewery. The brewery does not sell at retail. But there have been about seven visitors since February 2011. Some people are very fond of sake.

As yellow as ginger ale. That habitual aroma of aged alcohol. Sweet and sour, astringent, strong taste. Soft. It was delicious when the hot sake cooled down.

It is cold. I want to drink warm sake. So I heated it up. A little sweet. Slightly numb. Soft. A hint of fresh aroma. A fresh aroma like "Hacca" (Japanese Hakka).

Located in downtown Hachinohe. Tourist-friendly. The brewery is located in the back of a beautiful building, which we were allowed to tour. Sake brewing is now concentrated in the Gotoh factory.
Tempou era (1830.12.10-1844.12.2)
Aged for 9 years. While it has the unique aroma of aged sake (I like it), it is dry and tasteless as a sensation on the tongue. Slightly numb. It is soft on the throat. It is delicious when warmed up.

The brewery is no longer producing sake, but bottles and sells sake made by Toshi Segawa when he was making it in the past.
I was hesitant to drink it because it was too precious, but when I found it for sale at a liquor store in Okaya, I opened it.

Medaka (Japanese killifish) greeted us at the sales floor. It is said to be the second most shipped sake in Takaten. It is also sold at supermarkets.
