New sake for the second year, 2023BY. Recently, there seems to be a special distributor outside of the prefecture. It is starting to sell well. I made an appointment and visited the brewery. The brewery does not sell at retail. But there have been about seven visitors since February 2011. Some people are very fond of sake.

It was delicious when the hot sake cooled down. I'm glad to see that the damage was minimal, according to Instagram. The amount of information on the back label shows passion.

Tempou era (1830.12.10-1844.12.2) Aged for 9 years. While it has the unique aroma of aged sake (I like it), it is dry and tasteless as a sensation on the tongue. Slightly numb. Shina-no-shiki kyogen Strong and peculiar. Aroma that makes you wonder if it's hiney. Bitter taste and aftertaste like soy sauce. What is this? The sweetness and umami are enhanced when it is heated. It's delicious, isn't it? On the other hand, if you cool it down, it has a fruity, dry taste. What is this? Purchased at a sake brewery. In front of the station in Ina, the townscape with a Showa-era atmosphere is nice. Postscript. According to the flier, the 81% milled rice ratio is called Chogen series, M means Miyamanishiki and 91 means milled rice ratio. Homage to superstring theory. Nobeyama radio telescope. It seems to have been created under the concept of reducing food loss by low rice milling and saving paper for labels. Sustainable.

It is tangy. I had the impression that it was just too spicy a few years ago, so I really like this one. New Sake Festival is being held on 11/25 from 10am to 3pm. This is the first time in 4 years that it is held at the brewery. I heard about it yesterday at Toshimaya, so I went in today on a whim. In addition to all-you-can-drink arabashiri, amazake, cotton candy, and sake lees soup will be served. Vegetables and candy are also sold outside. Sake lees were included with every purchase. As one would expect from Masumi, they are very generous.

This is the third year for a blend of Tama-Asahi from Higashi-machi, Yatsuo-machi, Toyama City, and Fukutsuru from Nishimachi, Toyama City, created to revitalize the community when the Owara Kaze no Bon Festival was cancelled due to the Corona disaster. A hotly developed, shonen manga about rivals joining forces! The producer is Tama-Asahi this year and Fukutsuru in 2022, and the sake brewery's structure is a bit confusing.

var. of redlip mullet (Chelon haematocheilus) I imagined it would be a trendy one since it says on the back that it is sweet, tasty, and acidic, but it is much more sticky and sweet than that. It has a moderate acidity, giving a fruit-like impression. It goes well with cheese. This is one of two sake breweries in Yatsuo-machi, Toyama City. This was purchased at a liquor store near Toyama Station.

suicide divers (part of the Japanese Special Attack Units during WWII) Refreshing. Slight fizz. Slightly sweet with a mildly bitter aftertaste. The moderate acidity is really good. The unique aroma is impressive. I'm sorry, but it smells like a hospital. Purchased at a sake brewery. It is one of two sake breweries in Yatsuomachi, Toyama City. Founded in the Edo period. The building is quaint and beautiful. The proprietress is very gracious. When we searched for the brand name, we ended up with Fukutsuru from Nagasaki Prefecture.
