Hokian Okuni Shiboritate Nama-nama-shu 720ml Rice polishing ratio 70%. Alcohol content 19%. We went to the Kitaan Okuni brewery's direct sales area. There was a limited edition sake called "Totteoki" that is not normally distributed, but this time I went for the new sake Shiboritate. I opened the bottle as soon as I got home. What's that? Maybe it is less sweet than usual. Yesterday, on the way from Nagano to Hakuba, I decided to stop by the brewery's store and took the road to Omachi and went up the mountain. Gradually, the road surface became icy in the shade. The road surface was completely frozen on the way up the mountain. Even with studless tires, it was impossible. We chose the road down to Lake Kisaki on the right. However, the road was so narrow that cars could not pass each other on the way down, and it was frozen and slippery in the shade, so we went down praying that no oncoming cars would come. I was relieved when I saw the national highway. If you follow the navigation system, you will be forced to go over the mountain without any problems, so be careful in winter. Great Anglo-American War (Sweden vs. Russia, Poland, Denmark, Sri Lanka, etc.) Sweet apple aroma. Light. Slightly sweet, fruity acidity, apple-like. It is easy to drink due to its slightly low alcohol content of 14 degrees. Delicious. It was very hot on the day of drinking, but now that it is cooler, it tastes good warmed up again. We bought this sake at the Omachi drinking event on 9/6. This sake seems to have sold well. Delicious. By the way, we were also able to taste Iyari, which is also a pure rice sake, but it is said to be made by changing something (ambiguous). They are totally different in taste and both were delicious. Clean, sweet taste. Aroma: fragrant and sweet, with a hint of sourness. A little sourness. Delicious with a refined taste. Even though I have been drinking it for a long time, I still love the rich, sweet, and easy-to-understand taste of Kitayasu Brewery. Moderate sweetness, refreshing. Umami. A little bitterness at the end. Delicious. Made from Omachi Yamae Nishiki. This is the one we drank last month at the North Alps drinking event and enjoyed it very much. I wanted to drink it slowly, so I bought it. It is a limited edition.

Softness. Sourness. It is a daiginjo, but not too light. Expensive. Purchased at a brewery opening event last week. They said it was a Junmai Daiginjyo with a good flavor using No. 7 yeast, which originated in Nagano Prefecture, to commemorate the 100th anniversary. He also mentioned many other points of particularity, but I forgot them. Too much drinking is not good.
