100% Aizan from Banshu, apparently low temp. and long term unrefined. The label has a nice touch. Fruity, muscat flavor, refreshing. Immediately after opening the bottle, I could not taste the sweetness and umami in the aftertaste, but after a day or so, I could taste the sweetness and the fruity flavor, and it became very tasty. I would like to try other varieties. 4 → 4.5+

My favorite of the yeast Cell 24. According to the textbooks, it is positioned in the middle of the range in terms of flavor intensity and aroma strength. I thought the freshness had faded immediately after opening the bottle, but after a few hours, the sweetness and fruity taste increased and the freshness remained. I would recommend this sake to others. 5

807 series The one that got me hooked on Kaze no Mori. Good, full and complex texture at 80.5% milled rice. Fresh aroma reminiscent of muscat. Clean aftertaste, but fruity + light bitterness remains 5-

Past minute DX, Hidahomare 100%. While it is a daiginjo, it has a full, mellow, fruity, and rich taste of rice. Very tasty. I would definitely like to try other varieties. 5- (5-)

12% alcohol by volume, 65% flat polished rice Characteristic sake. Very fruity. A bouncing muscat. I would like to refer to other people's description. It is good for those who like sake overflowing with fruitiness. It has a good umami in the back, and the aftertaste is not ricey but fruity sweetness. It has a smooth sweetness, but not as sweet as a dessert sake. 4

Very tasty. It has a smooth touch and elegant gorgeousness (fruity) as well as a good sense of rice flavor. It is not an acidic type of sake, but it does not have any harsh or astringent tastes. Best served chilled as a mid-meal drink. Can be served with strong flavors. 4.5+.

Assemblage. New taste. Unlike the usual Senkin, the fruity taste was less fruity. The acidity is also different. There is umami in the back, but the sense of rice is not so strong. It tastes just like the word "new age sake" and the name "Silent Sea" which fits the modern diet. 4

Delicious. I think it is more floral and fruity than other chrysanthemums. I thought I might get a little bored with it, but I drank it in no time. I would like to compare them only with Kangiku Meikozo.

It seems to be limited to Akagi Onsen. It is doburoku flavor, so it may be a little different, but the cloudy appearance, etc. are completely dobu. It is my complete favorite among doburoku. The orikari was also delicious, and there was no strong acidity or sweetness left in the aftertaste.5

I thought I wrote it down, but it was omitted, so I'm trying to remember. It was in the fruity and umami category, but I got the impression that it was very sweet. This is the kind of sake that can be drunk together around a bottle, saying, "This is good! Maybe "ama-tsu" is close to "ama-ji. 4.5.

Edible rice is used. It is only available in Ibaraki Prefecture. It is best served lukewarm, and is very tasty with a full-bodied aroma and flavor of rice. I think the rice used for cooking is richer. At room temperature, the sweetness of the rice stands out. The charm of sake is that you can drink it warmed up in the cold season. The kappa tokkuri, my favorite sake cup, is used to its full advantage when warmed. Lukewarm 4.5

My favorite Kangiku brewery The aroma is soft and different from the so-called ginjo aroma (Yamadanishiki or juicy). The sweetness and umami remain soft from the first touch to the aftertaste, making it a sake to be sipped after a meal for relaxation rather than during a meal. I would like to spend a relaxing time alone while drinking it. 4.5+%.

I opened it at a banquet because I wanted to drink with others the sake that is not readily available nearby, but I only had two drinks and they were gone. Proof that it was delicious. Very aromatic. 4.5+.
