Edible rice is used. It is only available in Ibaraki Prefecture. It is best served lukewarm, and is very tasty with a full-bodied aroma and flavor of rice. I think the rice used for cooking is richer. At room temperature, the sweetness of the rice stands out.
The charm of sake is that you can drink it warmed up in the cold season.
The kappa tokkuri, my favorite sake cup, is used to its full advantage when warmed.
