Matsu no Tsukasa Junmai Ginjo Mizuki The aroma is a strong vinegared iso🍌. The mouthfeel is gentle and similar to the aroma, with the addition of a vinegared iso feeling + lactic acidity! Overall, it is a light and easy to drink type of wine! The gentle aroma remains in the oral cavity even after swallowing, which is a relief! It would be easier to drink if it had a little more sweetness since it is a low-alcohol drink 🍶🥰.

Form SG Vinegary smell typical of raw sake When drinking it, it is lighter than I expected! The mouthfeel is slightly sweet and the acidity is a little strong. It is not as juicy and heavy as the usual sakagata and is easy to drink! Mimuro Sugi Junmai Daiginjyo Sake Mirai The taste is full of gorgeous type of vinegary iso sensation from the palate! The slightly dark banana taste spreads and makes your mouth happy! (It has a strong flavor, but it is very easy to drink as it disappears quickly with a moderate acid bitterness without any sluggishness! It is very easy to drink!) ) This year, they also released a bottle of this wine! I'm looking forward to next year! 😍😍

Murasakyu Junmai Ginjo Momiji Label Slightly yellowish 🍶🟡. Strong alcohol smell Sugary sweetness on the palate, typical of Murasakiu...or is it? 🧐It's sweet at first, so the bitterness that is typical of autumn sake comes out strongly in the middle! (The sharpness afterwards is good🙆) I guess it's a good idea to pair autumn sake with food (I should cook myself a lot of food 🍳)

AKABU Amber Junmai Ginjo The aroma is iso and slightly muscat-like 😋. The taste is fruity with a clear, muscat-like clarity, with a gentle mouthfeel! The sweetness and acidity are just right, and the hiyaoroshi's characteristic depth is not too much, so it's usually easy to drink! 😍😍 I tend to drink hiyaoroshi slowly... but this one will be gone soon 🤣.

Sharaku Junmai Ginjo Sake Mirai The aroma is a mixture of vinegar iso and cappu 😏. Mouthfeel is sweet fruity! I thought it would be, but surprisingly it didn't spread out, giving a clean impression (vague outline?). It might be the type of sake that you can drink lazily with!) I think I got a strong bitterness in the aftertaste? I'm not sure 🤪. I think it's interesting that there are so many different types of sakes made with Sake Mirai 🤣.

Tenbi Tokubetsu Junmai Shin Ten The aroma is a mixture of vinegared iso and muscat! The mouthfeel is gentle and slightly juicy! (It's been a few days since the bottle was opened, so the gassy feeling was gone.) The balance of sweet and sour is good, with a hint of bitterness in the aftertaste 🥰. W Camouflage Takashima Omachi 50 Namahashime Junmai Slightly yellowish 🟡. The aroma is a mixture of capsicum and iso! 🍍🍌. The taste is also the same banana sweetness and slightly peculiar acidity! (Also a rather lactic acidity?). The depth (richness) starts to appear in the middle (maybe because it's made with Omachi 🧐). I haven't had a W in years!

Katsuma Junmai Ginjo The aroma smells of vinegar and strong alcohol 😉. Kaze no Mori test brewing sake ver.3 The aroma is like a mixture of Muscat and Cemedine 🤪. Unlike the usual Kaze no Mori, there is no gassy feeling at all! Mouthfeel and taste are both grapey and fruity, but light (maybe a little less heavy?). This is a bottle of Kaze no Mori, which usually uses ultra-hard water, but used soft water during brewing! I love test brews 🤣.

Jyushiyo Extra Snow Goddess Gorgeous capp aroma and slight alcohol smell😍. Quite fruity! Stable pineapple🍍 taste! But not sharp, mellow and clear mouthfeel, easy to drink! 🥰🥰🥰🥰. (I wonder if the aftertaste is a little sour?) I don't know when I'll be back next... thanks to the liquor store 🙇🙇🙇🙇.

The sharp aftertaste is a quintessential Shinzawa Brewing Company! I'm not sure if it's a good thing or not, but it's a good thing! A bottle of Noto Peninsula earthquake recovery support sake! I'm sure you'll enjoy it 💪.
