Junmai Ginjo-shu made from 100% Kinmon-Nishiki.

It does not leave much of a residue on the palate, and the mouthfeel is surprisingly refreshing. The sake is light and clean. It has a taste of elegance.
The taste has a bit of complexity in its cleanliness, making it enjoyable to drink.
This is delicious. So far, there is no shortage of Kimmon-Nishiki sake!

Chiyomusubi Junmai Ginjo Strong 50
First time drinking in a long time.
It is delicious. The pleasant acidity and soft texture are very good. It has an apple-like ginjo aroma of ethyl caproate. The moderate spiciness finishes it off nicely, giving it a refreshing aftertaste. The impression is that it is refreshing from the beginning to the aftertaste.
It is not too light, but has a strong umami flavor, so it is very drinkable.

Strong Junmai Ginjo-shu from Tottori Prefecture
It is read as "Goryoku".
It is said to be made from "Goryoku," Tottori Prefecture's sake rice, which is said to have a longer history than Omachi.
The rice is polished to 50%, making it a junmai ginjo of the daiginjo class.
The taste is dry, light, and refreshing. It has a rather structured taste, but it is just right, not too thick or too thin. It is firm yet refreshing at the same time. The spiciness is just right and there is no alcohol smell. A sake with a high degree of perfection.
Quite tasty. Highly recommended.
Hakutsuru no Kamisen Mini Glass
Light and smooth, with a pungent taste of alcohol.
