Continuing from last year, there were 32 sake breweries collaborating on Junmai sake this year. The acidity is more forward than last year. It also has an apple-like taste. Like a sour apple. Slightly sweet. It doesn't seem to have much spiciness, but the acidity makes it refreshing. The taste is a little complex, perhaps because it is a blended sake.

Junmai-shu is a collaboration of 32 sake breweries in Shiga Prefecture. It is said to be a blend of junmai sake from each brewery. I drank it yesterday but forgot to check in. The flavor is surprisingly light and fruity. It is neither thin nor heavy, but rather moderately thick. Perhaps because it is a blended sake, it has a slightly complex flavor. It is like drinking several different kinds of sake, even though you are drinking one kind of sake. However, it does not taste bad. In fact, it is very tasty. When you drink it while thinking it is light and fruity, you can taste the umami of rice, a gentle flavor, and a bit of spiciness. Overall, it is a refreshing and fruity sake, but it sometimes shows a different face. It is an easy-drinking sake. I don't know if it is still available, but I highly recommend it.
