This is a white malted rice brewed "Wakakura" from the brewery challenge "Wakakura" by Takasago Shuzo of Asahikawa City, Hokkaido. This is a pure rice sake made from 100% Hokkaido sake rice "Kitashizuku," and is a delicious summer sake with a refreshing acidity and a strong pure rice flavor. The sake itself is colorless and transparent, although the yellow background makes it hard to tell.

The other day, I received a bottle of Yamato Shizuku Junmai-shu from Akita Seishu in Daisen City, Akita Prefecture, at a tavern on a business trip. As the label says, it has the flavor and aroma of a junmai sake, but is easy to drink and goes well with food.

This is the first sake from Ibaraki Prefecture to be posted on Sake-no-wa. It is a Watanabune 55 Junmai Ginjo from Fuchu Homare in Ishioka City, Ibaraki Prefecture. The name of the place is Kunifu, but it is probably near the Shrine of Hitachi-Soja. It is a delicious sake with a full aroma and a strong flavor.

This is an unfiltered, unpasteurized junmai sake from the Shindo Sake Brewery in Yonezawa City, Yamagata Prefecture. It is made from 100% Miyamanishiki and 70% polished rice, but the rice flavor is not as strong as expected, and the taste is refreshing and clean. It has a refreshing, clean taste, but also a strong umami flavor, making it a very tasty sake that is aptly named "Soyokaze".
