However, although it has a lot of sweetness, the mouthfeel is light and free of any unpleasant taste, probably due to the high rice polishing. It is easy to drink with a lingering aftertaste that softly disappears and a slight bitterness that does not cause stress.
I think it is better to leave the bottle open for a while. I will enjoy to find out.
The color of the label was the same as Tojo Yamadanishiki of Jikin, so I put them side by side.

The effervescent mouthfeel is refreshingly sweet and accented with a graininess.
When the temperature is raised and the effervescence subsides, it becomes a very sweet sake, and the graininess is integrated with the sweetness, making it a mild mellow sake.
I prefer the latter!
Hanpukai no Toyoga
This is a mellow, unpasteurized sake with a mild aroma and taste. It is fruity but also rich, with a balance closer to mellow sake.
We prefer it at room temperature rather than cold, so we think it is best to drink it at a higher temperature slowly.
I bought it because I have probably never had hiwagatate before. This year's production is large, as a reaction to last year's low production, which is why I was able to get it with plenty of time to spare\\\╦٩٩³( 'ω')و /////
The aroma is sour berry and molasses.
