I finally bought a brand that I had been paying attention to for a while. I'll start with the Tokujun.
The aroma is modest, but there is a balance of acidity and umami, somewhat like Jikin!
The mouthfeel is quite complex, and it's light to medium-bodied.
The bitterness towards the end of the bottle extends the length of the bottle, so it would be best as a mid-meal sake.
The nose has a mild rice sweetness.
I would like to drink it with hot pots.
