I bought a bottle of alcohol that was all I could afford this year 🥴.
It's something about an arrangement with a 4-step sake mother.
The yeast is Masumi yeast and a high ester 1801 with no bubbles or something.
It has a big sweet aroma like strawberry jam, which I have never experienced in sake. It disappears after some time, so it's interesting that it's like the whole First Impact Criticism Awards swing in the opposite direction.
The mouthfeel is not as sweet as the aroma, but more like a red apple, with a good balance of sweet and sour.
I am speculating, but I think the balance is good because the sake and acidity levels are offset at the point where they are both at their fullest. It is full-bodied but not cloying.
It is best served cold. It has some rough edges, but I would like to pursue it because it is close to mellow sake.
