Drinking at home. Normally Tuesday is my day off, but tomorrow is a national holiday, so I'm off work today. It's only lunchtime as usual. Today's drink is my first Niida natural sake. It is a bottle brewed with natural yeast without using the 2023 brewing and 2025/7 manufacturing yeast. The sake is golden in color and has a smoky aroma. It has a matured flavor that spreads in the mouth. It does not have strong sweetness or acidity, but when drunk after sashimi, you can taste sweetness. It is a flavor that has never existed before. It is a delicious drink.
