It is Bunraku again. This is a seasonal sake. When you put it in your mouth... What is it? Is this Bunraku? It is totally different from the past Bunraku. It is hard to believe that it is from the same brewery. The way it is made tastes young and trendy. The Bunraku I have had so far has the image of a rugged, masculine, serious sake, but this one has the image of a recent young man. It is fruity, juicy, tropical, and has a strong rice flavor. It is delicious in its own way! It was a fun sake to drink!

Fire-aged only when bottled. A very well-balanced sake. The label looks like a summer sake, but it is not too thin, full and fresh, and very well balanced. I forget the price, but I think it was reasonable. I would like to buy it again if I find it.

This is my second time at the Classic Bunraku. Last time I was in a hurry and couldn't enjoy it very much. It has a slight muscat flavor, a slight sourness, and a slight sugariness, followed by a rich rice flavor. I wrote "just a hint" three times, but the overall taste is mellow. It feels a little strong in the mouth for the first time that day, but once you get used to it, it is just right. Yes, it is still delicious. It is, however, a local sake. I am writing about it in a patronizing way this time, too.

Junmai Daiginjo. The price is 980 yen. It is labeled "mellow and dry". Yes, it is good. I tended to think that it tasted like a cheap sake because of its price, but it tastes good as usual. It is a good sake. It has no particular character, but it has no strange taste, it is clear, elegant and slightly mellow, and it is perfect as a food sake. Even if it were priced at 1980 yen, I think it would be a good sake that you would not feel like you were losing money. The quality is amazing since it is at this price.

This is Kagamiyama from Koedo-Kawagoe. At first, it was so strong that we thought it was a shochu liqueur, but when we got used to it, it became a little mellower. It is characterized by its milky flavor, which is like that of avocado. However, it is not so harsh, but rather spicy and sharp to the point of tingling. It may be a good choice for a dish. It was a perfect marriage with mentaiko wings from Hakata!

It is Junmai Daiginjo Midori from Basho. Ah, this is a good sake. I have an image of Mizubasho as being sharp, but this one is sharp, but much more angular. It has a clear stream of clear water with a slight sweetness, a slight muscat-like aroma, and a soft and harmonious rice flavor that expands from there. It is easy to drink without feeling a sense of alcohol. It is not too mellow, but has a sharpness and a long aftertaste. It is not too assertive, but this level of modest and elegant sake is just right. This is a sake to be enjoyed slowly in a quiet space while facing the sake.

Sake from Aizu. The label states that it is a four-stage glutinous rice brewing process. What is a four-stage glutinous rice brewing process? The first taste is slightly sweet and bubbly, followed immediately by a crisp, clean taste with a hint of acidity. Sweet yet spicy? When the temperature is brought back to about 18℃, the sharp flavor spreads out in a flash. It was an interesting sake with various expressions.

Classic Bunraku. This may be a bit of a patronizing comment since it is a local sake, but it is delicious. It is a classic sake. Drinking it alone, it does not have much personality or assertiveness, so it does not leave a strong impression on the palate. The PURE series seems to be thicker. I think it is better to use them according to your taste. I would like to continue to support this sake brewery.

Katsuyama Baktari (I use this character because it does not come up in the Kanji conversion) I bought this sake not knowing that it was a sweet sake, so when I first sipped it, I thought it was "sweet. I am not usually a sweet sake drinker, so I was a bit confused, but when I drank it again with an awareness that it was a sweet sake, I found it to be delicious. It is not so much a sweet sake as a sweet sake, but it has a refined taste without a strange underlying sweetness among sweet sake. Refreshingly sweet with a hint of melon and honey. I don't think this sake is suitable as a food wine, but I think it is the kind of sake you drink like dessert wine or when you want to relax before going to sleep on a tired day. It is a sake that even girls who do not drink much sake can enjoy.

This is the edge of my favorite series of Katsuyama Dinsho. I think this is the third bottle. It has a good balance of rice flavor, fullness, and sharpness. It is delicious and perfect as a food sake, but it is not very cost-effective, or at about 1,800 yen, I would rather drink another sake. Katsuyama Dedication is expensive but worth it. En is a good alternative.

I bought it straight from the name-brand store, and it's absolutely delicious! This sake is perfect for the spring season as the weather is getting a little warmer. It is a little sweet, but has both a slightly sweet sake flavor and a soft rice flavor. This is a sake to be enjoyed at hanami (cherry blossom viewing) parties. It is an easy-to-drink sake that everyone can enjoy, including women and those who are not familiar with sake.

Comparison of Honjozo and Junmai from Nouguchi. The Honjozo was punchy and cask-strength, so I thought the Junmai would be punchier, but the result was surprising. I had imagined a strong and eccentric person like Keiji Hana no Keiji, but it tasted like an honor student. I guess this one is Naoe Kanetsugu. It is not as strong as the alcohol content, but still has a solid core. Supported by the acidity, it has a very well-balanced royal taste. It is an excellent sake, but when I think about the cost, I think, hmmm. It costs about 5,000 yen to buy, so if you are willing to pay this much, there are better sake available.

Nohkuchi's Honjozo is a slightly special sake that has taught me how delicious Honjozo can be. According to a liquor store in Ginza, Nohkuchi specializes in honjozo. It has been a long time since I have had it, but it is still as tantalizing as ever. It hits you like a cask strength whiskey. If you are looking for richness and full-bodiedness, then the Nomoguchi is the one for you. By the way, I got a set of Honjozo and Junmai from a hometown tax payment, and the manufacturing date was 2020.10 for Honjozo and 2022.10 for Junmai, even though the shipping date is 2022.11 for both. The Honjozo is matured for 2 years after bottling before shipping.

I had the impression that the taste was very beautiful. It is very smooth, but you can still feel the sugar on the tip of your tongue. However, it is not sweet, but rather elegant and softly fragrant as if passing by. I thought this aroma was very elegant. It is light and dry, but still has a strong umami of rice. It also changes to a full-bodied flavor at room temperature, and I thought that the expression of the flavor varied greatly depending on the temperature. I was impressed by how well made this sake is.

Yamagata Masamune's Aizan. The acidity and light yet full flavor typical of Yamagata Masamune seem to be well reproduced in Aizan. However, I think I would prefer a more authentic taste if I were to drink Aizan.

This is my favorite Sendai Ekimasamune from Katsuyama Shuzo. The sake rice is said to be Gin-no-Iroha. The expression is quite different from Katsuyama Sen. It has a fresh and crisp rice flavor supported by lemon and pear flavors and acidity. Still, it is strange that it tastes exactly the same as Katsuyama on the back. It's like a light, cheerful sake, and I liked it for that!
