Drinking at Kushie, a famous restaurant in Nishiwaseda. As a resident of Saitama Prefecture, I decided to drink Saitama's sake, Bunraku. It was fruity and sweet enough, and the fact that it was ogara-mi was also good. The sake was poured in large quantities, but I drank it in no time at all.
This is the first Yamamoto from Yamamoto Sake Brewery. It is brewed with Sake-komachi and Gin-no-sei sake rice with No. 6 yeast. There is also a version made with the same rice and No. 7 yeast. It has a strong alcohol content of 16 degrees Celsius, but is fruity and refreshing.
Opened a bottle of sake (it's a craft saké) that had arrived from the brewery last November in subs. There was almost no gasiness, and the top aroma was not very fruity. In the mouth, however, it has a fruity and sweet pear flavor, and the umami of the rice is clearly perceptible, as is typical of doburoku. The aftertaste is also good.
A fire-aged version of Sentori Classic. The aroma is like white peaches. In the mouth, it has a very delicious sweet and sour taste like dried grapes with a firm gasiness. There is a complex aroma derived from the wooden vat. I felt that I preferred this to the raw sake.
Sake from a brewery in Fukuyama City, Hiroshima Prefecture, given to me by a friend. We had it hot with yudofu (tofu). It is a classic sake, and when you finish it, it has a strong presence in the back of your throat. It has a strong rice flavor.
Two more regular deliveries from the brewery. This is a special pure sake version. The sake was served very warm. The sweetness and acidity were strong, and the flavor of the rice was rich and mellow.
At Sakaelabo Tokyo in Kita-ku, Tokyo. I had a drink with a friend and had Jikin for the first time in a long time. The balance of sweetness and sourness is exquisite. It is still delicious. I felt that it does not choose any dish to be served with it.

Aroma of sweet ripeness, complex yet fresh and weighty. It is a delicious wine that makes you want to drink it deeply. The cedar-derived aroma is very pleasant. The relationship with the local community and farmers, as well as the philosophy and thought that goes into the future of the global environment, is also a very good approach. We finally opened a bottle of sake that had arrived last summer. We had it hot. It has a refreshing, somewhat fruity taste, but it really asserts itself in the back of the throat. The aftertaste is very nice.
It did not have the mead-like honeyiness that I had imagined before drinking it, but it was very tasty as a sake. It is said to be a sake brewed with honey from horse chestnuts and rice suitable for sake brewing from Akita Prefecture. It has a sweetness and flavor like a noble sake.
