I found this instrument Masamune at Ginza Imameya. Since it is called Dewa Sanzan, I decided to compare it with Dewa Sanzan from Dewa Sakura. Although made from the same rice, this one has a fresher, lighter flavor, perhaps due to the fact that it is a mixed brew. Even though the alcohol content is the same, it does not have the same stickiness as the other sake, which is probably unique to Masamune.... I could drink this as much as I want. In a sense, it is dangerous.

I've been drinking Yamagata sake a lot, but this is surprisingly my first check-in with Sake-no-wa: sake brewed by Dewazakura Sake Brewery as a commemorative sake for the birth of Dewa Tsannin, a rice suitable for sake brewing developed in Yamagata in 1995. Not only the sake rice, but also the koji mold and yeast are Yamagata originals. While the initial aroma is mild, the flavor and fragrance are sweet and green apple-like. It has a crisp and refreshing aftertaste.

This sake is brewed by Maiko Tsuji, the female toji at Tsuji Honten, a sake brewery in Maniwa City, Okayama Prefecture. It is said to have "more lactic acid bacteria" because it uses twice as much soyashi water (lactic acidic water) as is used in the traditional sake making method of bodai yeast yeast yeast. Before drinking it, my expectation was that it would be a highly acidic sake, but it has a banana-like fruity flavor that makes it refreshing to drink. Although it has 17% alcohol content, it is a delicious sake with a gentle taste.

AKABU, Junmai Daiginjo in collaboration with United Arrows. The top aroma is like an elegant Japanese confectionery (wasanbon?). The initial aroma is like elegant Japanese sweets (Wasanbon?). In the mouth, it has a sweet taste like Japanese pear and a bitter taste with a very sharp aftertaste. I bought it online from Masudaya in Tochigi as a set with a bag that holds two 4-gou bottles. I look forward to visiting liquor stores with it 😊.

This sake is brewed with Sake Komachi, a sake rice produced in Akita. In the mouth, there is a sense of schwarziness and clean water. It has a nice sharpness and disappears quickly, leaving a slight bitterness. It is delicious not only as a food sake, but also as a stand-alone sake.

It has a taste suitable for a mealtime drink. The sake brewed by a sake brewery in Kazo City, Saitama Prefecture, is not flashy, but it is a delicious sake that goes well with meals.

Shinsei Tangerine drunk at Kuchifukuya in Kawagoe. It was delicious, with a strong citrus-like sweet and sour taste. I felt this one also has a flavor that goes well with meat dishes. I was happy to be able to drink this brand since I cannot buy it 😃.

The back menu at Kuchifukuya, located about 15 minutes from Kawagoe Station on Clare Mall. First time in a long time, Hana-yoku, Ginpu. It has enough fruity sweetness like pineapple. Still very tasty. I felt it goes better with meat dishes such as grilled skewers and horse sashimi than fish.

This is a comparison of the Sanchi Roku Nojo sake, which I had carefully stored to open in this month, my birthday month. This sake is made with the brewery's six specialties: rice from the Kikuchi River basin in Kumamoto Prefecture, cultivated without pesticides or fertilizers, sake brewed from a traditional sake brewery, no yeast added, and brewed in wooden vats. The Yamada-Nishiki is more fruity, while the Hozu has a profound rice flavor. The effervescence is pleasant!

Here is my favorite sake brewed by LAGOON BREWERY. This fresh craft saké has a strong tomato and basil flavor. You can have it as a top clear saké at first, and then mix it well and have it as a dobrok. Twice as delicious😋.

This is not sake, but it was a delicious sake, so I am posting it. Pukupuku Hop SuSuSu, released as a standard sake from Pukupuku Brewery in Odaka-ku, Minamisoma, Fukushima Prefecture, is a sake brewed with a 90% polished rice ratio, no yeast added, and made with mizu-hashiro ✖️ flower yeast. It has a pleasantly fresh, muscat-like flavor derived from hops, while still having a strong rice flavor. The low alcohol content of 7% is also a plus.

This is the sake I won in a survey at a brewery festival held at Kamaya, a sake brewery in Kazo City, Saitama Prefecture. It has a high alcohol content of 18%, but when served on the rocks, it goes down smoothly and refreshingly. It has a melon-like aroma and taste with a slightly thickened texture. It is the season for summer sake! It goes perfectly with cold sake.

Kabutomushi has been in storage for a while since it was captured, but since the weather has been extremely hot and summer is in full swing, the bottle was opened tonight with full anticipation. A limited-edition nigori nama-zake purchased at a local sake store, Yoshinoyasan in Tsuruse, Saitama. It has a thick and silky mouthfeel, not too sweet and refreshing. It is too delicious! I have been interested in Kunigon for a long time, and I have decided to recommend this brewery.

This is one of the bottles from the Nama-Hashiroshi brewing sake comparison that was won in the sake raffle at the Rikishi Kura Matsuri 2025 held last Saturday. It is a freshly stored sake brewed with sake musashi, a sake rice produced in Saitama Prefecture. It has a smooth, smooth taste and is easy to drink. The alcohol content is a little high at 16 degrees, but the mild and delicious flavor will keep you coming back for more. We enjoy this sake with firefly squid, which is in season right now, as a mealtime drink. It makes me happy!

I had wanted to visit the brewery for a long time, so I was happy to be able to attend the brewery festival, which was held for the first time in six years. The bottle I drank with my dinner was a limited edition sake that I won in the sake raffle at the festival. It has a sweet and acidic taste derived from the sake yeast, and a very good umami flavor.
