Returning from a car ride in Hida Furukawa I stopped by Hirano Brewery, a sake brewer in Gujo City. Hirano Brewery, which brews sake in Gujo City. It was raining a little and felt chilly. The bottle was opened with a simple crown without a cork. Large bubbles 🫧🫧 with a slight amber color when poured into a wine glass I thought it would be sweet, but it was crisp, carbonated and dry, refreshing and crisp👍. I wanted to drink it after a bath on a hot summer day.

It is a versatile sake with a soft sweetness and acidity of cucumber and herbs and a clean aftertaste that is also very sake-like 😊. It is as delicious as the rumors say 😋😋😋😋😋.

Tonight, here is a very popular project sake from Yamagata 💁. La Jomon Shoumon Koji Triple Masamune Nama Sake 2023BY✨. I think it is safe to say that this is the second most popular sake after Jyushidai. I think it is. Well, it's hard to buy and sells out quickly 😫 Now, this is the first Koji Sanbai Masozo-shu Nama-shu in my house. The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. This sake is sold by a united effort of breweries in Ishikawa Prefecture. The sake store I visited had two varieties, Kochira and Tedorigawa. Hoping for the recovery😌. It is a medium, slightly sweet delicious sake with a smooth texture. Microbubbles at the bottom of the glass. The mild aroma reminds me of green apple and the fresh sweet and sour taste is impressive and refreshing. Very tasty.

This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.
