I think it might be the same as the sake I bought about 3 years ago with the plague banished label, but it didn't have the tea-like taste that I felt in the sake I drank before 🤔. I was thinking tea-like = Wasshin. The Junmai Daiginjo I drank at the Sakai Off-line Meeting in June also didn't have the tea-like taste, so maybe it depends on the BY.

This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.

@sakebar Fukuzo Fire-brewed sake using Fukuoka Prefecture's original yeast called F44. Slightly sweet aroma of 🍍 on the nose. The palate is slightly sweet with a hint of 🍍. The aroma is as if it was made with hana-yosuyu in mind. However, the aroma is weak because it is fire-aged. The sweetness is also weak due to the weak aroma. I've been curious about Re:vive Kuga from Heiroku Brewery, but I've never had it before. I drank "layer" but this is my first time to try "Re:vive". I wanted to make sake, but I don't have a sake license, so I mixed germinated brown rice with sake and made it as a craft sake. (Brown rice is considered rice and is sake, germinated brown rice is craft sake, I didn't know that 🧐) Gentle sweetness, moderate acidity. Fresh and delicious 😋. Not schwashy, but fresh? Beautiful and tasty, but maybe it's my imagination, a bit subtly different from so called sake? (Can't describe it 🤣) Well, it's good because it tastes good 😆. It's the kind of thing that goes down smoothly.

Nagurayama Shuzo's Aizu Shikon is brewed in Aizu Wakamatsu City. Private brand of Fujimura Sake Brewery in Hofu City, Yamaguchi Prefecture The sake is named after a local poet and the owner of the brewery. We bought a 300ml bottle to try, as it is a traditional brand that has been commissioned to be brewed continuously for 26 years. The ginjo aroma is mild, and you don't even notice it on the palate. But I did not expect to find such a beautiful sake in Yamaguchi. Toyo Bijin, Tenbi, and other gorgeous brands are popular, This sake is a perfect representative of Yamaguchi as a food sake.
