La Chante the other day. I first learned about the sparkling LaChante when I visited Akita. Poured into a champagne glass, the beautiful appearance of bubbles rising from the glass is champagne itself 🥂. It is brewed with 100% Akita-Komachi and water from the Ou Mountains. It tastes like sweet champagne 🍾. But I personally didn't like the aroma. It smells a bit like glue for a moment after you take a sip from the top of the bottle. It's so perfect that it's hard to believe it's made from rice, but compared to real champagne (not that it needs to be compared), it's less subtle and has a strong rice carbohydrate feel (which is a good thing).

Sake from the Takeshita Brewery, birthplace of former Prime Minister Takeshita. Gorgeous aroma, The fruity flavor is just as the label says. The sweetness is reminiscent of pineapple, The sweetness reminds one of pineapple, and gradually the bitterness appears and disappears. It is easy to drink and goes down smoothly, I thought it was a sake to be enjoyed on its own rather than paired with something else. The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.

☀️ I've been seeing a lot of Toyoaki lately 🧐. I'm out drinking and trying a little 😁. It's a thin nigori🤍 with a hint of rice🌾. Sweetness is pale and soft on the tongue😚. Today was the first time I had Urasato, which I learned about from your post on Sake-no-wa 😀. The aroma is mild and gentle ginjo 😊The aroma on the palate is like melon🍈🥰The beautiful sweetness lasts until the end 😋The slight bitterness in the aftertaste pulls the whole flavor together 😍 delicious💕. Then, Urasato's Jungin ‼️ Last time I drank Jun-Dai and it was delicious, so I had high expectations 😋. This sake is sold by a united effort of breweries in Ishikawa Prefecture. The sake store I visited had two varieties, Kochira and Tedorigawa. Hoping for the recovery😌. It is a medium, slightly sweet delicious sake with a smooth texture. Microbubbles at the bottom of the glass. The mild aroma reminds me of green apple and the fresh sweet and sour taste is impressive and refreshing. Very tasty.

Tonight, here is a very popular project sake from Yamagata 💁. La Jomon Shoumon Koji Triple Masamune Nama Sake 2023BY✨. I think it is safe to say that this is the second most popular sake after Jyushidai. I think it is. Well, it's hard to buy and sells out quickly 😫 Now, this is the first Koji Sanbai Masozo-shu Nama-shu in my house.
