Hakkeikubiki is a series of the eight blessings of Kakizaki: sun, water, earth, sky, wind, trees, snow, and people. This is wind. Come to think of it, it was windy in Kakizaki. This is the second bottle from the Sake Rice Study Group. The sake rice is locally grown Koshitanrei. The aroma is light, but has the gorgeous flavor of a daiginjo. The taste is very broad. Now Igarashi Sake Brewery is complete 😝. It's not a draft sake, but it needs to be refrigerated, but it's delicious warmed up too ❓❓❓❓ but I can't drink heated sake on this hot day, so I'll drink it chilled to a crisp. ✌️ The aroma is mild but apple-like. This is the first time I've seen this warehouse. The rice used is Maikaze. As the name suggests, everything, including the yeast, is from Gunma, and it seems to be an annual event. The mouthfeel is mild. It is bitter-sweet with a slight banana aroma. It gently finishes with a hint of umami. It seems to have a lot of depth. Well-balanced and cohesive sake.
