Aomori Sake Inamuraya I used to drink outside. Special Junmai was done. There are not many check-ins for this sake. It's a sake from Aomori, so... This time, we've been taking our time with the fruity sakes we've been enjoying lately, and this one is freshly brewed and dry. It's a bit of a quirk, but it's very crisp and clean. Smell reminiscent of lactic acid, bananas, wind forest. Light golden color, sticky liquid, sour and sugary sweet, hard water, a bit banana-y, pungent. The aftertaste is sweet and tingly, reminiscent of canned fruit syrup. As you get used to drinking it, you can taste the bitterness. Outweighs the sweetness of the roll cake. After eating the roll cake, you feel the sourness and this is delicious. I want to drink it thick and sweet and sip it little by little. If you add ice, you get sourness and bitterness. When it is warmed up, the strong sweetness is drawn out and changes to a gentle taste, and after the slight sweetness and sourness, it seems to seep in. It is delicious. I couldn't finish my drink.

The first challenge for the first Bodai yeast sake is the sake from Nara, the birthplace of Bodai yeast 🕺🏻. Takacho 🦅❗️ from Aburicho Sake Brewery, well known for Kaze no Mori 🕺🏻. I got this one because it's only available in April! The label is so cool 👍! I thought it might be a bit peculiar since it's made from the Muromachi period, but it's not as sour as I thought it would be, and it's full-bodied and tasty while also giving off a unique flavor😳. I was expecting it to be a bit peculiar, but it was not as acidic as I thought it would be, and it was delicious with a unique flavor and richness 😳. It is rated -34 on the sake scale, but it is not too sweet and can be drunk easily 😋. Different from Kaze no Mori, this one was delicious too! I think I'll try another Bodai Hashimoto Sake 😋!

They use a yeast called "Kyo no Koto" which was jointly developed by Sasaki Shuzo and the Kyoto City Institute of Industrial Technology. If that's the case, why don't they write it on the label? It's quite floral, but banana-like. At the end, the sourness kills it. So far, I don't think I've had a bad bottle of Fuoh.

Japanese Sake Festival @ Osaka Bay Tower (¡Ω) Very yellow. Delicious and mellow as expected! Although from the Fushimi brewery, this sake would definitely be better suited to those who prefer San-in sake! I've been afraid to go to Kyoto since the new cologne, but this makes me want to go to Fushimi to buy some! But I still don't have the guts to take the train only in the direction of Kyoto where there are many tourists! Still, this sake has enough charm to make me brave enough to make the decision to go to Fushimi, even if I am trembling!

Hakkeikubiki is a series of the eight blessings of Kakizaki: sun, water, earth, sky, wind, trees, snow, and people. This is wind. Come to think of it, it was windy in Kakizaki. This is the second bottle from the Sake Rice Study Group. The sake rice is locally grown Koshitanrei. The aroma is light, but has the gorgeous flavor of a daiginjo. The taste is very broad. It is delicious.

Drunken Garden in Azumino, Shinshu. I was curious to buy it because it is 59% Hitogokochi, a Nagano Prefecture sake. As the label says, it is a refreshing sake with a delicious flavor. It is not at the top level of popular Nagano sake, but it has a glimpse of Nagano's sake character.

There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Special Junmai Nigori Nama-zake🍶Kami-no-ho🌾 from Mie Prefecture. Seme smell, fresh✨, a little schwag. Sour and spicy. Mustardy 🙄 according to my wife. When paired with the koji-marinated squid (🦑), it takes the edge off and cozies up to you. The power of koji is amazing 😆. Looks like a new brand to be born in spring 2023. ᐠ( ᐢᐢ )ᐟ🍶🍶🍶🍶 Today we had a new brand of Honami from Uozu Sake Brewery, which is now under the umbrella of Sake Capital 😀. 1,Onogawa(Akita) 2,Motoe Brewery (Toyama) ◀◁◀ 3,Shiwa Brewery (Iwate) I thought it was rare to find Hokuriku sake using Akita Sake Komachi, so I bought some at a local liquor store 😊. The aroma is fresh banana🍌 type? It is fresh and crisp in the mouth 🐜😚 The gentle sweetness and umami taste goes away quickly 😚 It is a delicious sake that is easy to drink 🥰. It is a newly changed brewery and I will be watching it carefully 🥳.

I was curious about this rather sharp sake with a sake strength of -72, an acidity of 5.3, and an alcohol content of 7%, so I bought it. The aroma was surprisingly normal, and I wondered if it was really green apple. But when I drank it, I was surprised. It has a very acidic, blue-like smell that makes it hard to believe it is only rice. It seems to go well with fried or oily food. Delicious ....
