While I was in Hirosaki, I bought a bottle of Toyobai,
I bought a tenbyo❣️
I wanted something I had never had before, but it turned out to be Yamagata sake instead of Aomori sake, lol.
It's also a jacket purchase.
Something about the pink jacket and the name "Sakura-ame" attracted me 🎶.
The aroma is strawberry🍓-like sweet and sour kind of gentle ❣️
The mouthfeel is smooth and easy to drink, with a mellow yet elegant sweet and sour taste 😆.
The bitter taste is firm and cuts the sweetness 👍.
Sundubu 🫕 and mini rice bowl set 😋.
Deliciously spicy and tangy 😋!
The lightly salty chicken rice bowl was also quite tasty 😊.

This is a raw sake exclusively sold at Yuki Sake Brewery in Nanyo City, Yamagata Prefecture. It is so rich that you don't feel the alcohol, and you can drink it easily.
It tastes best when well chilled. It is also good with ice.
We had Sakura-ame, a raw sake from Tenyumi. This sake was brewed by Shinri, the former toji of Tohoku Izumi. The other sakes in the Tenyumi series were also delicious, so we have high expectations for this one.
The aroma was refreshingly fruity with a sourness, but when we drank it, we found it to be quite sticky and sweet. There is a slight sourness, and I think it has a kind of rich muscat flavor.
It would be interesting to drink this type of sake with gratin or other white sauces. It has a strong umami flavor, so I feel it will not be defeated by the food.

This is the first sake.
It was purchased at Sake Maeda near Kamishinjo Station.
They mainly deal in craft beer and spirits, but they also sell sake such as Toyonobai, Katano Sakura, Higashi-no-Fuku, and others.
I think Tenyumi is the only one in Kansai.
I don't know what it is, but it is brewed by a method called malolactic fermentation.
I found out that it is a technique developed by Yamagata Prefecture, and it seems to produce a wine-like aroma.
The rice seems to be Dewa Sanbai, but some liquor stores' websites say that the koji rice is Aizan and the kake rice is Dewa Sanbai.
The rest is not stated, but it is said to be a pure sake.
It is fruity and has a green apple-like nuance. It is sweet but refreshing and easy to drink. It also has a sweet and sour taste like wine yeast sake.
It also has a little bit of a cotton candy-like taste.
When the temperature rises, you can taste the pungency.
Microbubbles are more noticeable when the temperature rises.
It tasted good when I opened it, but it changed a lot after opening.... Sweetness is decreasing 😥.
This Sake is a sweet and clean tasting daiginjo. The mouth feel is medium and soft. There is a fruity flavor of peach and strawberry. The finish has a little bit of dryness but is sweet and long for me. This won IWC Silver in 2022.
