September 12, 2021 Dinner at home. I got this yazu from my friend yesterday. Today, I'm going to taste it as nigiri. The sake is Kawakame, a local sake from Hachimanohama. Kawakame. It is light and dry, and goes well with fish. 300ml is not enough for me, but But since I drank it two days in a row I'll leave it at that...(´ω・；)

The last bottle caught my eye and my attention, so I bought it! It's a blend of Junmai Ginjo and Junmai Daiginjo blame. Exciting just to hear about it😊. And it's reasonable! On the day of opening the bottle, it had a neutral impression. Rather than the Tainai-san type that washes down as a food sake. I thought it was the type to stay close to you. From the second day onwards, the flavors come together and the sharpness from the sweetness is noticeable. It was delicious even when drunk on its own.

Shishimai Fuunroku Part 3 The next point of rest and ga-in is Tenjo Yumegen This label commemorates the 100th anniversary of Maruka Kensetsu, located in the same area as Nakayu Sake Brewery. The contents are probably the same as the regular Tokujun, but it is only at local festivals that this kind of sake is served as a sacred sake. However, I am not sure if this label is "Yamato" or "Taiwa". It has been a long time since I have tasted Tenjo Mugen, and while it has a dry base, it is slightly sweet, has a strong umami flavor, and has a nice acidity and bitterness. Naohiko Noguchi Institute I wanted to try. Smells like caramel and grain. It has a dry, drinkable, honey-like sweetness, a strong flavor, powerful acidity, and a clean aftertaste with enough stimulation to numb the tongue. Delicious. Impact like a whiskey. The official recommendation is to drink it lukewarm (around 40 degrees Celsius). The warmer it is, the less stimulating it is. [Kagataya hanpukai 2021⑧] The last bottle of the 4-month-long hanpukai was a special order of the first Niseko ☺️The rice used was Comet. It was the only one out of the 8 bottles in this hanpukai that was delivered at room temperature. It's the only one out of 8 that was delivered at room temperature. The aroma is gourd-like🥒The alcohol content is 17 degrees, which is a little high, but it feels more like alcohol and has a punchy taste. I'm not sure if it's a good thing or not, but I'm sure it's a good thing. This is how I completed my hanpukai 😆. I was a little nervous about buying two bottles of sake every month, but the brands were so gorgeous and I'm so glad I joined as a result❗.
