Last weekend, I hung around the town of Shichigahama. We enjoyed the new seaweed festival, and although we did a bit of fishing, the bite was not so good at this time of year with the low tide, so we had a very productive Sunday. We stopped by a liquor store owned by a former junior colleague of mine. The aroma of the top shelf is a rich ginjo aroma. The mouthfeel is dry, as is typical of Kochi sake, but the umami is also present. It has a slight sake-like aftertaste and finishes with a mild acidity and bitterness. ☀️ Masamune hunters go today🍶. I found an undrinkable Masamune at "TABI BAR & CAFE SUZUVEL" 😆. It is a Masamune brewed by Obata Shuzo, famous for Manotsuru. It has a mineral aroma 😳. Clean herbal mouthfeel 🌿. The aroma is so rich that the sensation of sake fades 🫥. Rice flavor🌾 masks the sweetness and acidity, and the ginjo aroma stimulates the nose. It leaves a slight bitterness and astringency in the aftertaste🙄. It was a new drinking experience with a unique flavor 🤗. How cool to "speak without speaking" 🤩. I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!
