The first saké I had last time was a clear saké of Yumeginko from Bishu Kotobuki with No.7 yeast. It is a draft sake, but it was stored at room temperature at the store, so we served it as it was. We enjoyed the new seaweed festival, and although we did a bit of fishing, the bite was not so good at this time of year with the low tide, so we had a very productive Sunday. We stopped by a liquor store owned by a former junior colleague of mine. The aroma of the top shelf is a rich ginjo aroma. The mouthfeel is dry, as is typical of Kochi sake, but the umami is also present. It has a slight sake-like aftertaste and finishes with a mild acidity and bitterness. I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. I drank it at a tasting and bought it because it tasted better than the sake labeled by Machida Sake Brewery. It is high quality for about 1,500 yen. I stumbled across this sake at the store✨. The Obata Sake Brewery, which brews Manotsuru, used to use the brand name "Sashu Masamune" until shortly after the war. And the only specs revealed were alcohol content and 100% Sado rice. I bought it because I was attracted by the story and the concept of telling a story through taste, not specs!
