Now Igarashi Sake Brewery is complete 😝. It's not a draft sake, but it needs to be refrigerated, but it's delicious warmed up too ❓❓❓❓ but I can't drink heated sake on this hot day, so I'll drink it chilled to a crisp. ✌️ The aroma is mild but apple-like. This sake was tasted along with the Junmai Ginjo I posted earlier. We were there when the store opened on the first day of tasting and sales, so all the sakes were unsealed, so we were able to sample them in fresh condition. I recommend going on Wednesday when the store opens 😆. It is Rokumaru with 60% rice polishing ratio. It is the same as Shinomine. It has more richness and umami than Junmai Ginjo. It is suitable for warming up.

@sakebar Fukuzo Osato Sake Brewery is located in Kama City, Fukuoka Prefecture. I didn't know about this place until I came to Fukuzo. I checked and there is a Kanbokuto Brewery nearby ✨. The first aroma is faintly sweet. In the mouth, there is a refreshing acidity and juicy sweetness typical of white malted rice. It is followed by a slight astringency that finishes it off. I thought that Kyushu must be quite a good place for sake, and I am Kuroda Bushy from Fukuoka. I have been drinking a lot of different kinds of sake recently, and I think my palate has become dulled in terms of its characteristics... (I mean, I am chronically drinking too much). It is a daiginjo, so it has no peculiarities that bother me, and I drink it every night like I am obsessed with it. It ran out too soon... what a waste... It has a refreshing to mellow taste, a refined throat and no unpleasant aftertaste. Thank you very much.

I was impressed with the Miyamanishiki Hi-Kiri that I had previously tasted, so I tried the nama-shu as well. It is fruity, sweet and delicious, but a little refreshing. It also seems to have more acidity. The hi-ire version seems more cohesive, but I personally prefer the nama-zake. It tasted good when it was first opened, but on the third day, it's not so good. The bitterness is getting much stronger. I think I would prefer the more stable fire-roasted version.
