Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

It was purchased at Amaha Shuho in Tokushima City. I had heard from my sister that it was delicious, and I was curious about it. I was able to get it when I visited the sake brewery in Seitama. I was finally able to get my hands on it when I visited Seitama's sake brewery. Ikebukuro with friends on Wednesday. It was not an all-you-can-drink party. Sake was my friend's choice as we sunk into the sake swamp. It was my first Hakuba Nishiki. Nice choice. It tasted like it would be ranked high in the Nigorin picks. It was fresh, fruity, sweet and refreshing. The upper half of the label is European and the lower half is Japanese, which gives it a Showa-era feel.

Sake opened at cherry blossom viewing. The aroma of melon is gorgeous. But it is not sweet and has a nice sharpness. My favorite type. I bought it when I visited Hakuba the other day. It seems to be a collaboration between a ski resort and a sake brewery. It is made from rice called Yamae-Nishiki, planted at the new moon and harvested at the full moon! Nagano sake is getting better and better, and I'm glad!

Shibuya with customers (1) Yesterday, a drinking party for a group of four with occasional customers. A rather nice restaurant on the edge of Shibuya. A little nice restaurant on the outskirts of Shibuya. The first sake was a request from one of the other guests, Niida Shizen-shu, which none of us had ever had before. (I've had it a few times myself 😆). But the "Tamura" that came out was the first time I had ever had it! 😘. It's like a natural sake, dark and strong. Sweet, tasty, sour all there 😋. But not as sweet as regular natural sake? First dish, hand-rolled seared conger eel and shijimi clam soup!

It's an Ibaraki sake bar, but they also sell a lot of small bottles 😆. So I bought a small bottle as a souvenir 🤣. I wanted to drink hot sake, so I chose this one that looks good for hot sake. This is Tsuki no I of Oarai ❗️ Yumbe Yokocho is the best place to drink, just stick the bottle in ❤️. I'll have it at 50°C 😋😋. Nice caramel color. And the aged aroma that smells powwow. It has a gentle, light, sweet mouthfeel and a moderate acidity. It has a gentle, light, sweet mouthfeel with just the right amount of acidity and a nice, sweet taste. I paired it with shime saba (mackerel) and it's great ☺️. The vinegariness that is unique to shime saba is refreshingly clean, yet the sweetness and umami of the sake is still there 😋. I thought it would be a bit more dry, but it wasn't as dry as I thought it would be 😉. Ibaraki sake review rate is going up because of the Ibaraki sake bar 😂.
