I felt like it was a sake to be enjoyed by itself and sipped slowly 🥳.

GW in Kanazawa! At the Kanazawa Sake Brewery in Kanazawa Station, we came across a dream machine that allowed us to sample sake for 100 or 300 yen (P.S.) Naturally, we took the challenge. The description said it was dry, but I prefer raw sake, so I chose this one. I tasted it thinking it might be a fruity type, but it was a clear dry sake that would go well with sashimi and other dishes. I appreciate free tastings, but I feel somewhat guilty about it, so this kind of reasonably priced tasting is very helpful and encourages me to try different kinds. I tasted three other types of sake here, and all of them seemed dry to me. I have an image that Ishikawa's sake is basically dry.

At the return home. Junmai sake from a local brewery, Takai Shuzo's "Koshinohatsubai". A rare and true gem among spring wild plants, Ki no Mame. It is served with the yolk of an egg. It is a sprout of akebi, and its bitterness and the breath of spring are irresistible. Local shiitake mushrooms are also available. The light and refreshing local sake goes well with this dish, and it is blissful.

Japanese Sake Fest @ Osaka Bay Tower (・ω・`) The effect of oak barrels, or something quite close to whiskey, but the mellowness and acidity of sake is also alive! I know it's just my imagination, but I feel it's similar to the whiskey akashi. Of course, if I didn't know any better, I wouldn't have thought so. I also had a bottle of Junmai Namae in the heated sake corner, but my memory is a little fuzzy on whether or not my brain was getting the alcohol when I got here! I do remember that it was meant to be heated, but that's about it.

It was sitting in the refrigerated section of a local co-op and there was only one bottle left, so I bought it without a second thought. It was delicious! The first sip has a hint of sweetness, but once it crosses the throat, it is bitter and refreshing. I love it. And I was impressed by the coop's nostalgia..! I checked the brewery and found that it is located in Niigata-Tsugawa. I used to love the hot springs in that area (around Sakibana) and stayed there many times, so I feel nostalgic. I would love to go back.

The general meeting at the end of last month was held at a local grand hotel, and the sake used was Nanafukujin Junmai from the Kiku no Tsukasa Sake Brewery. The sake used was Nanafukujin Junmai by Kikunoji Sake Brewery. It is not sticky-sweet, but rather light and easy to drink. If the sake is not made with the same level of care and attention as the all-you-can-drink sake, more and more people will leave the sake industry, and short-term tricks will not be effective these days. National Sake Fair 2025 (2) The second bottle is Nanafukujin. This sake is made by Iwate Prefecture's Kiku no Tsukasa Sake Brewery. I compared the sake rice at the Iwate Prefecture booth with Yui no Kou, Gin Ginga, and Gin Otome (3rd 📷), and I was still curious about the Seven Lucky Gods, so I popped it in for a refresher. It is served chilled. The color is almost crystal with a few bubbles. The top aroma is sweet and gorgeous with aromas of apple and melon. There is also a slight banana feeling. From the smooth mouthfeel with a gentle effervescence, the sweet and fruity taste slowly dissolves and spreads a soft sweet richness with a slight caramelized taste. The lingering sweetness is slowly brought together by a refreshing acidity and gentle bitterness in the finish. From the gorgeous aroma, a gentle, full-bodied sweetness develops, which can be easily tasted with a greenish acidity and a gentle bitterness. I like this lingering bittersweet fullness. Research shows that Kikuno-ji Sake Brewery is the oldest sake brewery in Iwate Prefecture and is currently located in Shizukuishi Town, Iwate Prefecture. This Nanafukujin has been a long seller since 1966, and with renewals, it is now a Junmai Daiginjo made with Ginga. I wonder if the yeast is from Giopanni, a GI Iwate sake. It is only at the National Sake Fair that you can meet such a sake 😊.
