The sundubu jjigae was I kept the spiciness low so that my family could also enjoy it. I made the best use of the soup stock of shijimi clam. The sake does not have much rice flavor 🤔. Maybe because it is a ginjo sake. It is quite light.

I wonder if the weather will continue to be so bad 😱. The general meeting at the end of last month was held at a local grand hotel, and the sake used was Nanafukujin Junmai from the Kiku no Tsukasa Sake Brewery. The sake used was Nanafukujin Junmai by Kikunoji Sake Brewery. It is not sticky-sweet, but rather light and easy to drink. If the sake is not made with the same level of care and attention as the all-you-can-drink sake, more and more people will leave the sake industry, and short-term tricks will not be effective these days. I attended an event at Tsushima Tsuru last weekend. The event featured a rice farmer in Shizukuishi Town, Iwate Prefecture, who grows rice mainly for sake rice, called "Sunakabe. The first toast was actually a junmai daiginjo made in Hawaii, shown in the fourth photo. What kind of sake is made by providing rice to a brewery in Hawaii? I thought to myself, as I toasted President Kudo of Washio Co! I followed with a sip. Oh my, it has an honest, soft, sweet taste. I wouldn't go to Hawaii to buy it, but I was a bit surprised that it tasted so good in a different environment. Next was the super dry Nanafukujin. It is said to be a bottle that pursues sharpness, and it is indeed light and dry, but you can also taste the delicious flavor of the rice. It was a bit of a surprise to me! 😁

Next was the Ryusen Yaezakura Junmai Sake Takumi no Omachi. Compared to the Yamada-Nishiki we drank earlier, the taste is a little more robust. The aroma is almost imperceptible, but the sweetness and umami of the flavor is stronger than that of Yamadanishiki. A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami!
