Lactic acidity. There is a sense of maturity. Both are moderate. It has umami. There is a lingering aftertaste. It makes you feel relaxed. It goes well with Japanese food.

The owner was very talkative and told us a lot about Chiba Prefecture's sake.
He is in the unique business of putting customers' names on sake labels. It might be good as a gift.

This is a super new sake that was just made yesterday✨.
The first taste is koji, followed by sweetness and a lingering alcohol taste, which I personally experienced for the first time.
I visited the brewery and the proprietress was very nice and let me try some tasting and I had a good time shopping 😉.
It goes great with the local sesame pickles 😘.
I didn't put it on the picture, but the fresh pickled pepper they were selling is also very tasty...!
