Tochigi sake featured in Hankyu Department Store's Traveling SAKE. It was not that spicy and easy to drink. It was different from the image I had in my mind. As the pop-up says, it is also surprisingly gorgeous. I guess because Tenryaka is made from organically grown rice, you can find it in natural food stores. The regular Amataka is particularly dry, and the organic series doesn't seem to be that dry.

Tochigi sake featured in Hankyu Department Store's Traveling SAKE. Nemuchi was hesitant to drink Tenryaka because it was dry, so I encouraged him to try Kuho Series, saying it was fruity. I have been avoiding Tenryaku until now. I was surprised to find that the sparingly spiced Kuo series is not spicy but rather sweet and delicious. I'm sorry I've been avoiding this sparring even if I saw it at a liquor store.

The sake I bought back from Tottori. Oh... it's a Junmai Ginjo, but it doesn't have a Ginjo aroma... Aged scent? Yes, it's actually a sake that's been aged for 3 years. Aged sake usually has a harsh aroma for me, but But this one has a gorgeous aroma and a soft taste. It's an excellent product for beginners of aged sake.

It is a royal Junmai sake with a very smooth texture and moderate flavor(s). Hokosugi has an outstanding cedar child cup, and the cup sake is excellent! Power up in order when heated. The spiciness and acidity are slight and work well with the depth! It goes well with any kind of sauce! There is no need to write much about it! Mr. Ota is a rerun of Nagasaki It is a treasure house of good food! There are also a variety of good sake, and it's a place I've always dreamed of visiting!

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

The smell is gorgeous and fruity. The mouthfeel is surprisingly soft. Overall, it is elegant, with an image of umami that rolls around in the mouth rather than spreading all over the palate. There is no bitterness, acidity, or carbonation, so once you get into it, you can drink it without hesitation. Is this common to all Jyushiyo? It has a really strong and unique aroma.

Softer the second day, but a big flavorful drink with a bit too much cotton candy sweetness for me. Has an intense bitterness on the finish as well. Not my favorite.
When I went sightseeing in the old town in Hida Takayama, I stopped by a store that was not a sake brewery but a direct sales store where I could sample sake for a fee. It is located right in the middle of the tourist area. This is the Oda Sake Brewery, the originator of Onikoroshi. Older Sake Brewery Kamiminomachi Branch You put a coin from the server and drink it. A coin is 300 yen for 36 ml. Hida Boast Onikoroshi Junmai Namaishu It is fresh but dry with a strong alcohol taste. Junmai Ginjo Hida Takayama I selected this sake by looking at the sake level, and found that it was the same as the one I drank at the Japanese Sake Festival. It had more flavor than the previous sake and was a true sake. There was a signature of Wakako Sake with "Pshu". 🖊️
