The first cup of the second night. The concept of "dessert rice wine" is very true. It has an elegant sweetness like Japanese sweets. It is thick and dense, with a distant bitterness. The sharpness is not bad and the outline is clear, so it is easy to drink even though it is quite sweet. It's difficult to make an appetizer with it, but it would go well with dessert. It's perfect with grape jelly👌.

Again, no rice used or major specs. It is a very low alcohol sake at 5%. Oh❗️It's really red! is my first impression. I remember drinking red sake before, but once again I thought rice is amazing. It's hard to recognize this as sake when it's served without saying anything. It's almost like a rosé wine, with a strawberry-like flavor. It's light, but I'm not sure I like the sweetness and mouthfeel. If I were served this sake at midnight, I'd be in a bit of trouble.

The rice used in this is also unknown. A slightly low-alcohol type of Junmai Ginjo So far, this is the most authentic and the driest sake in the HINEMOS range. The mouthfeel is clear, light and refreshing. When you drink it, the umami-sweetness spreads out, and at the end, you can feel the bitterness and spiciness in the throat and nose, and it tightens up quickly. Yes, yes, this is my favorite type 😋. The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.
