I saw a lot of Shuyoshi's La Chante at a souvenir shop in Akita. It was stored at room temperature in the sun, so I bought the one from the liquor store's refrigerator. I bought this at Mori Sake Brewery on my last trip to Hirado! The president of the company was in charge of the cash register that day😆. He politely introduced us and told us that it tastes best chilled in a wine glass! I was a little puzzled as to whether or not I should post it here, but it came up right away in a brand search, so I guess it's okay. This is "Doburoku" from Tokyo Station Hasegawa Sake Brewery. In the mouth, there is a fine gassy sensation, and the umami and sweetness of the rice spread to the back of the tongue. There is almost no sourness or bitterness, and the texture is smooth. There is none of the rice glutinousness found in other doburoku. The alcohol content is 7%, so it is suisui while savoring the flavor of the rice. The "akaba saba" (red mackerel?) is simmered in miso and served with dinner. I took it out of the fridge because we had something called "red mackerel" simmered in miso on the dinner table, but it was gone soon after. It was delicious when I drank it at the restaurant, but it is still a delicious sake to drink at home.

A 50% polished Junmai Daiginjo, Meguro Gorosuke, from Tama Flavor in Uonuma City (formerly Morimon Village), Niigata Prefecture. As is typical of Uonuma sake, it is a ginjo-shu that is not overly aromatic. I remember drinking it once at Tatsuya, a yakiton (grilled pork dumpling) restaurant in Numabukuro on the Seibu Shinjuku Line.

Aizan sake, still stocked but a little interrupted for refrigerator reasons😅. Shochiku Ume, but brewed in Nada, not Fushimi. There's a big building that looks like a factory near Sunshine Wharf. The bottle and cap have a unique design. The aroma on the nose is quite gorgeous, with a slight nuance of peppermint. In the mouth, it has a gorgeous sweetness and a bitter spiciness.
