This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. There is a sweetness of rice in the back, and it is refreshing. Not bad. After the sweet and juicy sake, we had a glass of So-no-Sato. Not bad. I've only been at work for a little while after the new year, but the three-day weekend is wearing on me. Sake heals me 😄.

It was a gift from a junior colleague at work. I received it last year and remember that it had quite a punchy 🤜 flavor. It has a faint smell of cemedine, and a somewhat chemical 🧪 atmosphere in the mouth, but it has a nice, clean taste that doesn't interfere with the meal 😊. It's only 3 days old and it's getting sweeter and tastier 🙌 I got it in a bottle, so I'm thinking of trying some heated sake with ✖️ on the back label 🧐.

The rice used is Yamadanishiki. The rice polishing ratio is 35%, is it the flagship sake of the brewery? It has a solid ginjo aroma, and while it is basically light and dry, it also has a mild sweetness. There is little miscellaneous taste and the mouthfeel is good. The aftertaste has a good accent of alcohol and a solid flavor. Overall, it is a good sake with a cohesive taste that makes you realize again that the alcoholic version is better for the Daiginjo class.

Visiting Ise with my wife's parents! (We just went there last October 😅) Geku shrine → Sarutahiko shrine → lunch at Ise Kaku Uchingu restaurant → around the inner shrine and back to the inn for my parents and to Ise Man for myself and my wife 😁. This time, due to the space in our fridge (and budget), we only tasted the raw sake! It was refreshing and delicious 😋😋😋.

The 11th bottle of 2025 home brew 🍶. I received a bottle of Shintaro from Kochi Prefecture! The label is austere 😏I got it from the hanpukai and it was a good encounter because this is a brand I don't often buy myself 🍶I would give it to someone if I had a "Shintaro" around me 🙆♂️ It tasted and crisp and delicious! Thank you for the food 🙏.

Sannomaru Autumn hiyaoroshi from Kaito Otokoyama Shuzo. There is almost no standing aroma, but the hint of aroma is pear. It is a junmai sake that was fire-aged before storage and bottled fresh. It has a rich flavor, but it is still fresh, so it is not hard to drink and before you know it, you will be back for more.

Return Series. With the concept of "to the world", alcohol 12℃. It's something I've been curious about because of my perception that it's an emerging force in Niigata. It's a white wine taste. Almost a white wine. The sourness of the wine was so strong that I gave up on it.

A 50% polished Junmai Daiginjo, Meguro Gorosuke, from Tama Flavor in Uonuma City (formerly Morimon Village), Niigata Prefecture. As is typical of Uonuma sake, it is a ginjo-shu that is not overly aromatic. I remember drinking it once at Tatsuya, a yakiton (grilled pork dumpling) restaurant in Numabukuro on the Seibu Shinjuku Line.

Lighter than expected, sour, sweet and ricey. I was worried before drinking it because it had quite a bit of color, but I was relieved to see the explanation on the back label. The Tama Flavor brewery is known for its regular brand, Tama Flavor, which is a light, dry sake that is the king of Uonuma, but they also brew Itkey and 46°C Echigo-Bushi (Samurai), which I recognized once again as a brewery with a very sharp personality.

The aroma was slightly cemedine-type? (The amazake was really tasty.) The aroma was slightly cemedine-like, but not too much. The taste is slightly gassy on the palate, and then the umami spreads into the mouth with a bang, leaving a sour taste and a lingering aftertaste that feels like you are drinking sake, which is pleasant and fluffy on the nose. It is fresher and tastier than when I tasted it. I really like this lingering taste of sake around 17 degrees, but I always feel frustrated that I can't drink a lot of sake because it goes around so fast 😅.

Drunken Garden in Azumino, Shinshu. I was curious to buy it because it is 59% Hitogokochi, a Nagano Prefecture sake. As the label says, it is a refreshing sake with a delicious flavor. It is not at the top level of popular Nagano sake, but it has a glimpse of Nagano's sake character.

Whale wave is next. I thought it was your first time in Gifu Prefecture and you got one 😊. The aroma is fresh and fruity by nature, with a slight hint of hineyness, perhaps because the bottle was opened 3 months later. Well-balanced fruity. Almost no acidity. A full-bodied flavor softly appears at the end of the bottle. Although it is a draft sake, it is quite soft and mild. Maybe soft water? 🤔 It is best served cold or chilled.
