The sake rice is Oceto, a sake rice from Kagawa Prefecture, which I had never tasted before. After the bottle was opened, it did not have much impact and the acidity of Yamahai could be felt, but on the second and third days after the bottle was opened, the taste became more pronounced. It is mellow, full-bodied, and delicious. It is a good example of the Kaijin brand.
Next time, I would like to try Yamadanishiki or Kame-no-o. If they still sell them, that is.
Heavy and delicious, dry and full-bodied. Gentle acidity and cashew nut sweetness. The taste changes as it goes from chilled to room temperature, so this is a raw sake that will be very different when heated 🤔.
The cap has the words "Edikichi" (みちにしかしかればきち) on it.
Furoizumi's commitment = Yamahai brewing, aging, no added yeast (brewer's yeast), and wooden vat tenbin Shibori. You can feel the brewery's "Edikichi" spirit.
But still, it is scary to have a bottle of sake in the fridge because you can't tell how much sake you have 😱.
Postscript
The third day after opening the sealed bottle, the sweet acidity and umami spread is Wonderful! It's getting mellow and umami, deep and dry and juicy 😍.

I am ashamed to admit that I could not read "soma," so I looked it up...
I was told that "soma" means a mountain from which lumber is cut, and that "my standing soma" from a poem by Dengyo Daishi refers to Mount Hiei, so I guessed it probably means this mountain.
I prefer a lighter sake, but this was a solid, slightly heavy sake for me. The aroma is refreshing, and it is just right for sipping.

Soma" is taken from "soma-jin", a lumberjack or a person who works in the mountains. The name "Soma" is derived from "sokoro," meaning "lumberjack," or "sommelier," a person who works in the mountains.
Tengu" is a legend of tengu in Kutsuki Village, which is why tengu is used in the monument of Kutsuki Onsen Tenku.
A few years ago, when I first started enjoying sake, a clerk at an antenna store in Shimane told me that he personally recommended a Shimane sake called Ohroku, which is not available here, so I looked for a distributor and bought some. I don't remember what it tasted like, but I do remember thinking that it was some kind of samurai-like sake....
Although it is a Jokai brand name, I bought it for the first time in several years due to the liquor store's strong recommendation. They released a little bit of the 2017 vintage that was ready to drink.
The aroma is full-bodied and nutty, like nuts and avocado.
On the palate, hmmm? What is this... sweet... or so I thought... but it is not sweet... the savory, aged-like richness comes with a gulp and quickly disappears with a strong acidity, sh.... It's a sensation I've never had before, and it's delicious.
After opening the bottle, it rounds out and softens. There may be a slight bitterness in the aftertaste. The fullness and umami are still there, but the mouthfeel becomes gentler and easier to drink.
I didn't get the impression that it was particularly like a samurai, but I would like to try a Super-Oroku or something like it again.
It may be difficult to age a sake at this level, but I hope to encounter it again when my taste buds have grown up.

The taste was strong, but rounded, not harsh, and deep.
At a restaurant, I ordered this sake because I was curious about the label, which looked rather shabby for "Shiboritate Nama-no-Hara Sake".
The sake was not as fresh as I had expected, but had a full-bodied flavor. I was attracted by this gap and bought it on the Internet.

I like Iwao a lot. I've been to the Iwao brewery, or rather to the company, and I fell in love with the Showa-esque atmosphere of the place. Wai no Yao.

Purchased after being recommended by Takahashi Yo Shoten.
It is a blend of sake made by the previous toji that remained in Mr. Takai's brewery, known for its rocks.
Hot sake.
It can be drunk at room temperature, but a slight sense of maturity can be felt.
The sense of maturity is also noticeable, but when warmed up, the restrained flavor and aroma blooms and fills the mouth with a full flavor.
Very tasty!
