Following the last Hatsushibori, this one was also purchased at Icoma. The rice is Yumeko. It has a tight, gaseous feel. The sweetness and umami are felt in the middle of the bottle, but the second half is dry and the bitterness gives the impression of being sharp. The taste was of the same high level as the first shibori 😋. After a few days, it becomes quite dry 🤔. Hmmm, I wonder if it changes a lot depending on the order in which you drink it. The 3rd picture, I drank a lot of Okayama sake at Icoma-san a while ago 😅 I think Mannen Yuki is the sake that Usagi-san said looks like a crowded train on a rainy day🤣.

Buy at Icoma Another brand of Yukihikosan It's not written on the bottle but according to the internet, it's a draft sake. It almost spurted when I tried to open the bottle 😅 I heard it was dry, and it is indeed dry, but it has a sweetness to it with a rummy/apple-like schwashiness. Easy to drink and emptied quickly💦.

When it arrived last year, it was only available in one bottle, but I bought it as soon as it came in a 4-gallon bottle. At Icoma It is a strong type of sake with 20% alcohol by volume, rich and flavorful, but also sweet and easy to drink, so it is a dangerous one 😨. When heated up, it becomes gentler and sweeter. I get the impression that it has an alcoholic taste when it's warmed up.

January Tasting at Ikema Sake Shop (3) It is Calm's Orikara Nama! It has a refreshing taste typical of Kibotsuru with a touch of leesiness. Reasonably priced because it's made with out-of-grade rice 🤗. I was going to buy this one, but after drinking the Yuyamanishiki, I realized how good it is and didn't buy the calm this time💦. Echizenmisaki was also very good 😋.

Ikema Sake Shop January Tasting (2) Not as strong as the aluzoe shiboritate, but still very strong. Junmai seems spicier. I was drinking it while saying it tastes like Sogen 🤣. We also drank a freshly squeezed Gokeijo. It's sweet and tasty 😋.

I went to buy it as soon as I saw that Icoma finally got a shipment of Kamaike's raw sake in stock 😁. They don't seem to make a lot of Nama Sake (they fire-brew it right away), so I had been asking for Nama Sake for a while! Nemuchi-san drank it last year 😊. The rice used is Hyogo Sake85 There is lees at the bottom of the bottle, so mix it and drink it. It is drier than I expected. It has a bit of a greef-like quality, but also has a cemedine-like quality to it. As Nemuchi-san said, I think it is quite unique. It's probably the spiciest Kamaike I've ever had 🤔. I think it might be less spicy if you leave it in the fridge for a little longer than if you take it out of the fridge freshly. I want to drink the Junmai Daiginjo Nama-no-Harajiku that Tomo-san was drinking! I've been able to find a variety of kamiike nama sake at a liquor store in Nishinomiya, but I'd prefer to buy it at a store near me 🤔. It's been 3 days and I think it's starting to look apple-like.

I was told that after Haikusei Basho, a sample of Buntaro's new sake had arrived, so I was allowed to drink it! New brewery established in Shinsen-cho in 2019. It looks like the Nagao Sake Brewery in Kyotango City was relocated and renamed. I wonder if it's related to the license? At the beginning, there were two elderly toji's brewing the sake, but this was for technical guidance and now the president's son is the toji. They are not a member of any brewing associations and rarely appear at events😅. Amazake seems to be the main product, and local housewives visit the brewery with their own containers. They are offering a service of amazake subs 😁. The first bottle was Junmai Nama Sake. It didn't have much sweetness, but I thought it tasted better than the junmai ginjo nama-zake I had last year. No label on the back, so specs are unknown. The second bottle was Junmai Daiginjo Nama Sake. I've bought a Sandeshi with the same label in the past, but to be honest, it was a little too subtle... This one was delicious, with some sake-like characteristics, but with a fruity ginjo aroma coming in later 😋. It's definitely better than the ones I've had in the past, so I guess they're getting better every year. Buntaro is another one to keep an eye on 🤔.

Then two kinds of Echizen cape First, a Nakadori Harazake, which looks delicious just by its name! The moment I drank it, I said "Yum! 🤣 It's not sweet, but it's fruity and has a strong umami flavor. It's not sweet, but it's fruity and has a strong umami taste, and it was really delicious 😋. I think it was my favorite of all the sakes we were allowed to drink that day! Next up was the first tank. It was freshly pressed. It was just as delicious and full of umami as the ones we have had in the past! The Nakadori sake was a little more modern, but this one was a little more robust. I heard that they tasted many different types of sake at the brewery, and they all raved about how good it was 😊.

Purchased at a New Year's Eve tasting at Icoma Sake Shop. It is slightly fruity and sweet, but the acidity is impressive. I felt I could taste the flavor better when it was closer to room temperature than when it was cold. The fourth one is a cracker made by the Full Moon Pon company that I purchased at Dairy and Yeast. They sold fennel and rosemary, so I chose the fennel. The fennel is kneaded into the dough of the full moon pon. The taste is like unbaked bread, making the most of the ingredients. I think the fennel aroma is so strong that some drinks will defeat the taste 🤔. I think it would go well with darker and more flavorful drinks. I mean, only Kansai people know what "mangetsu pon" means😅. A few days after opening it, it tastes like apricots like Yoohee said before!

Second of a set of two 🎂As it's the eve of the festival, we chose 🍾-like drinks 😁. Second fermentation in bottle. Thin and cloudy with lots of microbubbles. A little dry and full of rice flavor. The slight bitterness at the end gives it a very good impression. Tomorrow is a non-drinking day, so I guess I'll have an after party on Saturday 🤔. I plan to open another bubbly on Saturday 🍾. Oh, my 30s are ending 😿!

This is a set of two bottles, one fire-brewed and one unpasteurized. I bought this for New Year's but missed the timing and opened it on a random day💦. I bought it at Icoma Sake Shop. I had always said I would buy it at the end of the year and wondered if they were sold out, but they had it 🙇. It's a junmai ginjo, but with a 50% milled rice ratio, it's a daiginjo spec. Fruity, muscat and citrus sweetness. It's 500ml and will be consumed in no time at all😇. I felt the unique flavor common to fire-aged Motomine Tsuru 🤔. I felt it was similar to Tsumugi -2024 参- though the specs are different. I'll have another bottle 🎂 at the eve of the festival😁.

Free-run" is a wine term and is said to mean "unpressed" in Japanese sake. The only sake I can think of that uses the term "free-run" is Kiyotsuru. Of course I bought it at Ikoma Sake Shop 😁. I think this is the only place outside of Kyushu that has it in stock. (I think they sold out at the end of the year and are out of stock now) Fruity, round and rich. Slightly dry? It is reasonably priced for the time-consuming production process and good for its cost performance. Highly recommended! I heard a guy from a certain brewery was surprised that the same process would cost twice as much at our brewery 😳.

Happy New Year 🎍. We look forward to working with you in the New Year 🙇. Sake I secured for New Year's Day 😁I caught a small shipment of sake at Ikoma as soon as it arrived 😁. Jive-san drank it at the Bishu competition. I heard it won a gold medal and a label award at the Bishu competition 🏆️ I really wanted to bring this one to the year-end party, but it didn't arrive in time so I had to give it up! It's gorgeous, a little rich, sweet and delicious. A sake that is both modern and classic. It is not a cold sake, but it can be served cold or lukewarm. By the way, Kamosho Sake Brewery is aiming for 100 koku this season!

It's been a while since I drank it because it seemed to have a good reputation. I was told to buy this Winter Moon, and I actually tasted it and it was delicious, so I bought it at Ikoma Sake Shop. When I poured it into a glass, I felt microbubbles. It's light and refreshing, but has a balanced flavor of sweetness, but not too sweet. As Nemuchi reviewed, it is sweet and tasty, but also has a classic atmosphere. It says "white peach yeast" so maybe it's a placebo, but it has a kind of peachy feel to it.

This sake was sold out at the recent Yizizishin tasting. This sake is made from Yizyishin's original yeast "San-go-Yeast" and is said that it was made by the image of the high-class sake 100 years ago. It tastes so beautiful that it is hard to believe that it has been aged for 4 or 5 years. It has a little bit of a peculiar taste. I personally like the rich taste. I thought it was amazing that this sake, which costs about 5,000 yen, sold out so quickly. The bottle and label are retro and cool!

Not too sweet, but sweet enough to feel it, and a little bit of gas. It has a fresh and light taste with a unique aftertaste that is typical of Kibotsu. It is extremely tasty!

It's Christmas Eve🎄 and I wanted to open a nigori, so I ransacked the fridge👀. I found 2 bottles each of Yaegaki's new sake in stock at Icoma Sake Shop, so I bought a bottle of Nigori 😁. It's 65% polished rice and 2200 yen including tax! It didn't spurt up and was slightly bubbly. Slightly sweet and a little dry. Sourness and a slightly strong alcohol taste at the end. Seems to be better as a mealtime drink than as a stand-alone alcoholic beverage. Melon-like at best, but a little more cemedine 🤔. I think Yaegaki should lower the pricing a little more, as they are all very aggressively priced for their recognition 🙄.

It's been a while since I heard that the rice was changed from Gohyakumangoku to Hyogo Sake85. Of course, I bought it at Ikoma Sake Shop. It is gorgeous, sweet and delicious. Slightly effervescent. Even though the rice has changed, Hibokuizumi is still as delicious as ever. I can drink all of Izumi Sake Brewery's sake with peace of mind! I think my tastes have changed a little since I started drinking sake, but I can still enjoy the same delicious sake and recommend it with confidence.

We had the opportunity to sample some freshly arrived sake at Icoma Sake Shop! We also tasted Gokeijo and Kibotsuru Yuyamanishiki, but this is the only one I took a picture of this time! It was rich and sweet, but not cloyingly so, just the right amount of sweetness. I think I could drink it easily with low alcohol content. It's a Junmai spec, but it's very cost-effective at 1100 yen, probably because it's made with out-of-spec rice!
