I also got to taste samples of the just released Boshimaya 25th Anniversary blended sake 🙏. It looks like a blend of White Koji Junmai Omachi, Junmai Ginjo Gohyakumangoku, and 5BY Junmai Daiginjo Yamadanishiki! It had a complex taste with a lot of acidity, probably due to the inclusion of white malted rice sake, which is typical of blended sake! Hmmm, I prefer the usual Boshimaya 😅. I've never had a good experience with blended sake 🙄.

Next, the Aigamo farming method of Kikumonmei 🦆. The character of Fujimoto Farm called Aigamo-mon is cute😻 It doesn't say it, but it's unfiltered. It was quite sweet and tasty, and I liked it a lot! They seem to want to make a modern sake, and I look forward to their future! Currently it seems to be almost exclusively fire-aged, so I'm looking forward to seeing the nama-sake as well 😊.

After KITTE, we went to Ikoma Sake Shop. We had a chance to drink some of the sake that we had acquired during our Hiroshima expedition! My first Kiku-Bunmei! The first bottle was a freshly squeezed sake! The first half of the bottle was quite sweet, but the second half was very spicy! However, there are no off-flavors, which is common in country sake, and it is a good sake that seems to be brewed with care.

Icoma Sake Shop Honshu Ichiban Tasting (2) Junmai Daiginjo Unfiltered Nama-shu Doors-sharp- Sake strength +5.5 Sembon-Nishiki, Reiwa No.1 yeast It was already sold out when we visited, so we only tasted it. Calmer and a little more refreshing than the others. Good for eating! Doors-shirocodile- Junmai Ginjyo, white malted rice, straight pumping Sake strength -7.7 Hachitanishiki Hiroshima Ginjo yeast It is not all white malted rice, so it is not sour and easy to drink. I bought this one, too, so I'll check it out later... All 6 were raw sake😍. The staff at the brewery was very friendly and the brewer of Shugetsu came to visit us privately 😊.

Icoma Sake Shop Honshu Ichiban Tasting (1) There were many events and tasting events in many places this week, but I went to my neighborhood liquor store 😁. Honshu Ichi from Hiroshima was there! I drank Junmai Nama-nihonjunshu straight pumping Sake strength +4 Senbon-Nishiki Hiroshima Ginjo yeast Sweet, tasty, fruity, and delicious 😋 It has a Sake meter value of +4 but has almost no spiciness. It tastes as good as the famous pre-sake. Junmai Nakakumi Orikagarami The one pictured behind the Naokumi. The specs are the same as for the nao kumi. It tastes just as sweet as when I bought it and drank it before. Second fermentation in the bottle. They said that the reason why it feels sweet and tasty for its alcohol content is because they use Hiroshima Ginjo yeast. Doors-dry- Junmai Ginjyo Dai-harakuchi Sake strength +9 Hachitan-Nishiki, Hiroshima 2021 yeast J&N-san drank this before 😊. Sake that can be enjoyed by everyone without feeling too high in alcohol content. Not too spicy, but sharp with umami and freshness. It seems that the 2021 yeast is from the No. 9 series. Doors-fresh- Junmai Ginjo-Okirigarami Nama Sake strength -2 Hachitan-Nishiki 1801 yeast Sweet, but more subdued than the first one. They really wanted to do a secondary fermentation in the bottle. I bought this one, so a review will follow...

Collaboration sake with Morinori Since I bought a bottle of Morinori, I thought I had to buy a bottle of Rairaku, too, so I bought it a few days ago at Ikoma Sake Shop. Compared to Morinori, Rairaku is quite fruity and sweet. It has a cherry-like sweetness. It has a little bit of a sparkling taste. A little cherry-like aroma in the mouth as well. There's also an acerola-like vibe, I think. I like Rairaku better, but if I want to pair it with a meal, I'd go for Morinori 🤔. Junmai Daiginjo is about 1600 yen and tastes like this, so I think it's pretty cost effective. If I were to make a rough comparison between the two crafts, I'd say Morinori is the serious, honor student type, while Rairaku is a bit of a wild, flirtatious guy. I think Rairaku has a slightly different flavor. I think Morinori might be the one that is stable and doesn't fall apart after a few days 🤔.

Collaboration sake with Rairaku. Purchased at Ikoma Sake Shop with Motomine Tsuru. It says it was shipped in March this year, but this is not new sake but the previous year's sake. They say the new craft sake should be arriving soon. The craft sake is the last to be brewed among Morinori's sakes. Slightly gassy and sweet. It is smooth and clean. It has a slight ripeness, but the umami is strong and delicious. It has a minerality or a flavor that is unique to Morinori. It's a jun-dai, but it looks good heated up. I've got the Rairaku version, so I'd like to compare the two 😁.

Purchased at Icoma Sake Shop Fruity, sweet and delicious. The subtle gassiness is a nice accent. The impression is that it finishes with a tangy bitterness. The aroma that passes through the nose is very gorgeous. It is extremely tasty!

Ikoma Sake Shop Aizu Homare Tasting (2) Continued from ①. We drank Kitakata Terroir Junmai Ginjo Gohyakumangoku The atmosphere is similar to what we have had so far, but a little spicier. Aizu Homare Junmai Ginjo Fukunoka This one is also quite sweet and tasty. I've never seen this label before and thought it looked unusual. Aizu Homare Yozakura Junmai Ginjo This is said to be a spring sake. It has a classic flavor among the ones we drank this time. Classic but light! Lychee nigori sake The lychee flavor is in full bloom. I thought it would be hard to sell it because I think lychee is not to be liked or disliked. I like lychee myself 😘. Strawberry nigori sake I liked this one the best out of all the liqueurs. It's more strawberry than sake-like, and it's delicious! Chocolate Nigori It is very chocolatey, but it also has a strong alcoholic taste. I was so confused because there were so many sweet ones, but I bought the Fuku-no-Ka. I wondered if the brewer was from Fukushima, but it seems he is a resident of Tokyo. It seems that it was planned to coincide with an event at a department store in the Kansai region.

Ikoma Sake Shop Aizu Homare Tasting (1) The day after Harukas, we had a tasting of Aizu Homare at the nearby Ikoma Sake Shop! I didn't take notes, so I'm going to split this post into two parts because there were so many kinds of sake 😅. I drank Kitakata Terroir Junmai Ginjo Kitakata Yamadanishiki I think they called it Utsukushima Yume Yeast. It's pretty sweet and fresh tasting. Aizu Homare Junmai Ginjo Yamadanishiki I think they said 1801 yeast. Fruity and quite sweet. Sold out when I was there. Aizu Homare Junmai Daiginjo Yamadanishiki from Banshu It tastes like a richer version of Junmai Ginjo. Kitakata Terroir Junmai Unfiltered Unrefined Genshu Yume no Kaori Fire-brewed but raw and muscat-like Aizu Homare Junmai Ginjo Yume no Kaori This is also fresh and sweet. I think it tastes similar to Karahashi. Yamadanishiki is the same, but the label is a bit similar too 🤔. Aizu Homare Yamadanishiki and Yume no Aroma are available only at two stores, a sake store in Saitama and Ikoma Sake Shop, since they were just released.

New brands handled by Icoma Sake Shop Fresh, slightly effervescent, sweet and delicious. Despite the label, the taste is quite modern. It has a bitter taste towards the end. The taste itself is comparable to popular brands. I would recommend it to people who like Hana 00. Personally, I think the label could be a little better 🤔. I had a chance to try some samples of Honshu Ichiban the other day, and there were a lot of fruity ones, so I'm looking forward to their future arrivals!

When I went to Icoma's tasting event, I didn't buy the sake I tasted because it seemed to be sold out early😅. The label is the same as the one I had before, but the last batch was Hyogo Yume Nishiki and this batch is Yamada Nishiki. It's sweet and fruity and extremely tasty 😋. A little light with a hint of acidity. It's the best of both worlds, and it's made with out-of-spec rice. 3rd, after drinking Fuku Chitose, the recommendations are full of Fukui sake 😅. I've only never had Sari 🤔.

I bought it because it was the first time I'd seen it in Kifeng Tsuru and it looked rare. It seems that only Takashimaya in Namba and Ikoma have it in stock in the Kansai area. It's fire-brewed, but it's very tasty with a slight sparkle and a refreshing sweetness that's not too sweet. I thought this time that I like smooth nigori better than thick nigori 🤔. The nigorigo is fine and silky! When the temperature reaches room temperature, you can feel the spiciness.

Maru-san was drinking Yuyamanishiki, so I thought, yes, let's drink Kibotsuru! So I opened the bottle 😁. I bought it at Ikoma Sake Shop. There was a small amount of air bubbles in the glass. Fresh, sweet and tasty, but a little bitter in the second half, which is a nice accent. Bitter, but the lingering sweetness gives the impression of being long-lasting. The one I had in the past was a bit twitchy, so it was nice to have it in good condition.

February Tasting Extravaganza #2 at Icoma Sake Shop The last one is Boshimaya, which just arrived 2025 Limited Nigori Sake It looks like a nigori version of the regular junmai unfiltered raw sake! It's a little bubbly with a slight effervescence. It tastes sweeter than the standard one, but it has a taste typical of Boshimaya. I was interested in Kihotsuru Omachi and Buntaro, but this time I bought Morinori Technique, which seemed to sell out early, and Kihotsuru Haba-Nigori, which I couldn't find anywhere else.

February Tasting at Icoma Sake Shop ④. Echizen Cape Ihyakumangoku I first drank it at room temperature, which was fine enough for me personally, but when I heated it up, I felt like I could drink it forever and ever 🤣. It's like an all-rounder that can be drunk at any temperature!

February Tasting at Ikema Sake Shop (3) It is a fire-brewing of Motomine Tsuru Yumachi! Usually, the draft is released first and the hi-ire is released later, but Kibotsuru's Yumachi is a rare case where the hi-ire is released first! This is the first time I've had hi-ire Omachi, but it's fresh and gassy like a draft. Sweet and juicy and delicious 😋. It was my favorite at this tasting! I also had a bottle of Morinori's Dry Nama Sake and it was consistently delicious 😋.

February Tasting at Ikema Sake Shop (2) 3 kinds of Buntaro from the newest brewery in Hyogo Prefecture Junmai Namaizu and Jun Dai Namaizu were not photographed this time, so please see my past post for labels 😌. The Junmai Namae was more delicious than the Junmai Namae I was allowed to try a while ago, with more flavor and more umami. The Jun Dai Namae is a slightly different type of Jun Dai Namae with a less Jun Dai-like flavor and a bit more floral and fruity in the second half. When I heated it up, I got the impression of rice and graininess in the first half and spiciness in the second half. I felt the flamboyance was reduced. I've had a bottle of Yuki no Shirahama in the past, but I got the impression that it was more refined and tastier than it was then. It is similar to Junmai Namae, but a little spicier.

It's Cat Day, but I haven't prepared any particular cat labels or anything 😹. I've been wanting to drink a draft version of this sake since the fire-aged one I had before was so good. I bought it at Ikoma together with the tobin-tori. It is fresh, fruity and delicious with a strong umami flavor. The higher the temperature, the sweeter it tastes.

I went to buy it as soon as I saw it was in stock on Icoma-san's SNS 😁. It has a little color. It has a slightly ripe taste and a beautiful umami. Sake that is easy to drink with a good balance of sweetness and spiciness while being a little refreshing. It feels refreshing but has a strong umami. The cost is great, at around 1,000 yen for a tobin 😳.
