The first of the 2023 test brews from Masamune Instrumental is a junmai-shu made with a new variety, Shunyo.

This is the Jyushidai that I won in the lottery last year.
I was looking forward to drinking it on New Year's Day.
I couldn't find the detailed specs on the back label. All I could tell was that the rice was polished to 35%.
Well, it looks like a label for a certain airline's international first class in-flight sake.
If that is the case, it seems to be "brewed using Yamadanishiki produced in Tojo, a special A district.
Well, I don't have a very discerning palate, so as long as it tastes good, I'm happy.
The aroma is gorgeous with a hint of sweetness.
When you drink it, it has a soft sweetness.
The umami spreads in the mouth, and when it passes down the throat, it quickly converges and disappears.
