We will have a spring Tenbi Usunigori, also known as "Momoten". First, the usual supernatant. It is quite delicious even as it is 😋. The second cup is a well mixed light nigori. The second glass was a well-mixed light nigori, with almost no acidity and a gentle sweetness and flavor, giving the impression of a more refined version of the nigori Yukiten we drank the last time. It is another Momoten that is too good to drink and you end up drinking too much 🍑.

Risshun morning pressing, this year at Senkou! It is full of transparency and freshly pressed, and the taste couldn't be fresher! It starts with a slight sourness, and as you drink it, the aroma of muscat, and then the bitterness disappears. It is still young, with an alkalinity of 14 degrees, and the aroma and taste are all gentle and beautiful✨. The Risshun morning pressing was definitely a delicious Senkou 😋.

Jyushidai Junmai Daiginjo Happy New Year everyone 🎍. This is the Jyushidai that I won in the lottery last year. I was looking forward to drinking it on New Year's Day. I couldn't find the detailed specs on the back label. All I could tell was that the rice was polished to 35%. Well, it looks like a label for a certain airline's international first class in-flight sake. If that is the case, it seems to be "brewed using Yamadanishiki produced in Tojo, a special A district. Well, I don't have a very discerning palate, so as long as it tastes good, I'm happy. The aroma is gorgeous with a hint of sweetness. When you drink it, it has a soft sweetness. The umami spreads in the mouth, and when it passes down the throat, it quickly converges and disappears. As the temperature rises, the volume increases. Delicious 😋. It can be served by itself or as an in-between-dinner drink. It was a good sake that was too good for me at the beginning of the year. Please enjoy it again this year 😄.

Hakutsuru Nishiki from Toichi Sake Brewery It is hard to read the image 3.4 on the wrapper. Zoom in and read the image. It is still well balanced from sweetness and umami to umami and bitterness. The rich aftertaste is just as delicious as the label on the back. There are a limited number of Hakutsuru-nishiki sake breweries. I would like to try the sake from each brewery if I can find one. I hope to have a Hakutsuru-nishiki from Jyushiyo someday!
