The first of the 2023 test brews from Masamune Instrumental is a junmai-shu made with a new variety, Shunyo.
Immediately after opening the bottle, there is a slight gassy, muscat-like aroma of white grapes. It has just the right balance of slightly sweet flavor and slight acidity and bitterness, and the lingering aftertaste is short and disappears cleanly.
The sake is easy to drink at 14°C and has a clear taste with no cloying flavors ✨When the temperature rises a little, the complex umami flavor comes out and the sake goes further 😋.
