Eiko Fuji's dry Junmai Itsusen Kazehada At the Costco Sake Brewery. I happened to be drinking it with Niimasa, so some of it may be due to that, but it seemed very refreshing and easy to drink. Sake made from Gohyakumangoku rice. Polishing ratio is 80%. A cool and refreshing sake with a taste that goes well with any kind of rice.

25th Anniversary Future Sake 2 The world of high-temperature fermentation, that is, The regular Kaze no Mori is made by fermenting the unrefined sake under a high-temperature fermentation environment, as opposed to a long-term low-temperature fermentation. The taste of Kaze no Mori is still there, but the impression is a little sweeter. It is floral and sweet, with a hint of bubbles. Not my personal central preference, but it would certainly suit those who like the sweetness of rice and the sparkling feel. I definitely thought it was better served in a glass. With a boar's mouth, the sake feeling increases. Therefore, I found that it is something that has a Genmaicha feeling due to the aroma. It would be interesting to try it with an oinokuchi. My impression was that it was similar to sansho.

My first impression was surprise at the color. It was a shade of jasmine tea or green tea. The aroma is sweet. There is also a hint of alcohol in the background. When I drank it, it tasted exactly like brown rice tea. It tastes like tea, perhaps because it is made from 100% brown rice. Kaze no Mori is still interesting.

Unusually, a junmai daiginjo. The aroma of the wine spreads softly. It was refreshing in the mouth, and the sweetness of the rice lingered in the aftertaste. When drunk from a boar cup, the sweetness is strong from the start.
