Junmai Daiginjo made by polishing Futato's Aizan to 48%.
The first time the bottle is sealed, it is very bubbly and slightly effervescent. After the sweet grape-like aroma and sweet flavor spread out, a refreshing acidity and slight astringency appear and disappear beautifully.
The flavor is also very rich, so you feel it is good right away after taking a sip 😋 The sweetness and flavor are well balanced with the acidity and bitterness, and the sake goes down without getting boring!
I think I'll try to chase two hares this year.
